4 celery ribs, chopped
1 small onion, chopped
2 tablespoons butter
6 cups cubed day-old bread (1/2-inch cubes)

2 pork tenderloins (1 pound each)

Steps:

  • Preheat oven to 425°. In a small skillet, saute celery and onion in butter until tender. In a large bowl, combine the bread cubes, celery mixture, salt and pepper; set aside., Cut a lengthwise slit down the center of each tenderloin to within 1/2 in. of bottom. Open tenderloins so they lie flat; cover with plastic wrap. Flatten to 1/2-in. thickness. In a large skillet, brown pork in oil on all sides over medium-high heat., Spoon stuffing onto one tenderloin. Top with the second tenderloin; tie with kitchen string. 1 pork tenderloin (3/4 to 1 pound)
1/2 cup chopped onion
2 tablespoons butter
1 cup soft bread crumbs
1/4 cup minced fresh parsley
1/4 teaspoon rubbed sage
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/8 teaspoon pepper
1 egg, lightly beaten
1 bacon strip

Steps:

  • Make a lengthwise slit about three-fourths of the way through tenderloin; open tenderloin so it lies flat. Flatten to 1/4-in. thickness; set aside. , In a small skillet, saute onion in butter until tender. Add bread crumbs; saute until crumbs are golden brown. Remove from the heat. Stir in the parsley, sage, rosemary, salt, pepper and enough egg to moisten the ingredients. , Spread stuffing on one long side of tenderloin to within 1/4 in. of edges. 3 tablespoons margarine
½ cup chopped onion
½ cup chopped mushrooms
2 stalks celery, chopped
3 cups torn day-old bread
salt and ground black pepper to taste
1 (4 pound) boneless pork loin roast
3 tablespoons water, or as needed
1 tablespoon ground thyme
1 tablespoon herbes de Provence
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Heat margarine in a skillet over medium heat; cook and stir onion, mushrooms, and celery in the hot margarine until vegetables are tender, about 12 minutes. Transfer vegetables to a bowl. Stir bread into vegetables until moistened; season with salt and black pepper.
  • Cut the pork loin almost in half lengthwise, cutting to about 1 inch from the bottom; open pork loin like a book. Cover with plastic wrap and lightly pound with a meat mallet to flatten the meat. Spoon stuffing onto the pork loin, roll the meat over the stuffing, and tie pork loin together in three places using kitchen twine.

1 pork tenderloin
½ bunch flat-leaf parsley, chopped
⅓ cup bread crumbs
¼ cup dried currants
3 cloves garlic, minced
2 sprigs fresh rosemary, chopped
1 egg
2 tablespoons olive oil
2 teaspoons salt
1 ½ teaspoons ground black pepper
1 pinch cayenne pepper
salt and ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Remove the flap of meat at the wider end of the tenderloin and trim the last two inches off of the narrow end of the tenderloin; chop trimmings and reserve.
  • Cut from one side of the tenderloin through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Cut a few shallow slashes in the meat. Cover the meat with plastic wrap and pound to about 1/2-inch thick. Roll up pounded tenderloin, cover with plastic wrap, and refrigerate to keep cold.
  • Mix chopped pork trimmings, parsley, bread crumbs, currants, garlic, rosemary, egg, olive oil, 2 teaspoons salt, 1 1/2 teaspoons black pepper, and cayenne pepper together in a bowl with a fork until stuffing is well-combined.
  • Unroll tenderloin on work surface. Spread stuffing over tenderloin, leaving a 2-inch border on one of the long-sides. Roll up tenderloin, ending at the 2-inch border; tie meat with twine to secure shape. Season tenderloin all over with salt and black pepper.
  • Heat an oven-safe skillet over high heat until hot. Cook tenderloin in hot skillet until browned, 3 to 4 minutes per side.
  • Cook in the preheated oven until pork is slightly pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer to a plate and let rest for 15 minutes before removing twine and slicing.

1/4 cup butter
1/4 cup finely chopped celery
1-1/2 cups water
3/4 cup dried cherries
1/2 cup chopped pecans
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 boneless pork loin roast (2-1/4 lb.)
1/2 cup KRAFT Balsamic Vinaigrette Dressing
3 cups loosely packed baby spinach leaves

Steps:

  • Heat oven to 450°F.
  • Chop 1 rosemary sprig finely. Melt butter in medium saucepan on medium heat. Add celery; cook and stir 4 min. or until crisp-tender. Remove from heat. Add chopped rosemary, water, cherries and nuts; mix well. Stir in stuffing mix just until moistened.
  • Place roast on cutting board with short ends at 12 and 6 o'clock. Holding a sharp knife parallel to work surface, make 1/2-inch-deep lengthwise cut through underside of roast, pulling back meat with your free hand and unrolling it as you continue to cut through roast. (You should end up with a piece of meat that is about 1/2-inch thick and 3 times the size of the original roast.) Cover meat with plastic wrap; pound to even thickness.
  • Brush cut side of meat with 1/4 cup dressing; top with spinach and stuffing mixture, leaving 1-inch border around all sides. Roll up tightly, starting at one long side. Tie closed with kitchen string. Tuck remaining rosemary sprigs under string. Place in shallow pan; brush with remaining dressing.
  • Bake 20 min. Reduce oven temperature to 375ºF; continue baking 15 to 20 min. or until meat is done (145°F). Remove from oven; cover loosely with foil. Let stand 5 min. before slicing to serve.

4 -6 pork chops
1 box stove top pork stuffing mix
1 can cream of mushroom soup
3/4 cup water, mixed with
pork dripping
1/4 cup melted butter

Steps:

  • Brown chops.
  • Remove and add water to the frying pan.
  • Place chops in a single layer in a baking dish.
  • In a bowl,mix the vegetable packet from from the Stove Top mix with 1 cup very hot water and 1/2 stick melted butter.
  • Then add contents of crumb packet.
  • Mix well.
  • For as many chops,make a ball of stuffing and place on top of each chop.
  • Put soup into skillet containing the drippings,mix and pour over the chops and stuffing.
  • Bake uncovered, 1 to 1 1/2 hours at 350 degrees.

My wife makes the best stuffing in the world. She made so much this year for Thanksgiving, we froze some to enjoy later. I was looking for a way to spice up a pork loin and this was the result. The family and friends loved it.

5 lbs pork tenderloin
1/2 cup Dijon mustard
3 teaspoons cajun seasoning
2 (18 ounce) boxes stove top pork stuffing mix
1/2 lb ground beef
1/2 lb Jimmy Dean sausage
1 (10 ounce) can chicken broth
1/2 cup butter
1/2 cup onion (diced)
1/2 cup celery (diced)

Steps:

  • With a sharp knife, slice the length of the tenderloin about an inch up from the cutting surface and continue working your way in as you roll back the meat. You should end up with a 1" thick rectangle the length of the tenderloin and about 8-10" wide.
  • Cover with plastic wrap and pound till 3/8" thick. You should have a larger, thinner rectangle now.
  • Sprinkle with 2 tsp Cajun seasoning, then spread mustard evenly over the surface, reserving 2 tbl spoons for later. Set to one side to rest.
  • This is basically my wife's stuffing recipe:.
  • Brown and drain the ground beef and sausage.
  • Prepare the stove top dressing according to instructions on the box.
  • In the butter, sauté onions and celery until soft.
  • Mix the prepared dressing, onions, celery, ground beef, and sausage.
  • Add Chicken broth a little at a time until stuffing is moist, but not mushy--you may not need the whole can.
  • Spread the dressing evenly over the flattened tenderloin.
  • Roll from the long side making a "jelly roll" shaped roast.
  • Tie, using butcher's twine, several knots along the length of roast to hold it together.
  • Sprinkle the outside with the remaining Cajun seasoning and spread remaining mustard.
  • Bake, uncovered at 350 degrees for approximately 2 hours or until the internal temperature is 170.
  • When done, remove and let rest for 15 minutes.
  • Remove twine, and cut 1" thick slices and serve.
