6 ladyfingers, split
2 tablespoons brewed coffee, divided
1/2 cup (4 ounces) Mascarpone cheese
1/4 cup confectioners' sugar
1 tablespoon chocolate syrup
1/2 cup heavy whipping cream
1 tablespoon baking cocoa

Steps:

  • Line the bottoms and sides of two 8-oz. ramekins or custard cups with ladyfingers, arranging them to resemble a spoke pattern. Brush with 1 tablespoon coffee; set aside. , In a small bowl, beat Mascarpone cheese and confectioners' sugar until smooth; beat in chocolate syrup on low speed., In another small bowl, beat cream until stiff peaks form; fold into cheese mixture. Spoon into ramekins; drizzle with remaining coffee. Dust with cocoa. Refrigerate until serving.

1 1/4 cups strawberry preserves
1/3 cup plus 4 tablespoons Cointreau or other orange liqueur
1/3 cup orange juice
1 pound mascarpone cheese, room temperature
1 1/3 cups chilled whipping cream
1/3 cup sugar
1 teaspoon vanilla extract
52 (about) crisp ladyfingers (boudoirs or Savoiardi)
1 1/2 pounds strawberries, divided

Steps:

  • Whisk preserves, 1/3 cup Cointreau, and orange juice in 2-cup measuring cup. Place mascarpone cheese and 2 tablespoons Cointreau in large bowl; fold just to blend. Using electric mixer, beat cream, sugar, vanilla, and remaining 2 tablespoons Cointreau in another large bowl to soft peaks. Stir 1/4 of whipped cream mixture into mascarpone mixture to lighten. Fold in remaining whipped cream.
  • Hull and slice half of strawberries. Spread 1/2 cup preserve mixture over bottom of 3-quart oblong serving dish or a 13x9x2-inch glass baking dish. Arrange enough ladyfingers over strawberry mixture to cover bottom of dish. Spoon 3/4 cup preserve mixture over ladyfingers, then spread 2 1/2 cups mascarpone mixture over. Arrange 2 cups sliced strawberries over mascarpone mixture. Repeat layering with remaining lady fingers, preserve mixture, and mascarpone mixture. Cover with plastic and chill at least 8 hours or overnight.
  • Slice remaining strawberries. Arrange over tiramasù and serve.

This light, roll your eyes, taste bud tantalizer has become a traditional wedding anniversary dessert treat that I've been making for my husband and me for 17 years. You might call it a happy hubby dessert! This is my easy version of a classic with the elimination of raw eggs and a wonderful fresh strawberry layer and puree base. It's delicioso! It is made to accommodate two extra large portions.

1 pint fresh strawberries
½ cup confectioners' sugar
1 cup mascarpone cheese
½ cup heavy cream
2 tablespoons coffee-flavored liqueur
18 ladyfingers
⅓ cup chilled espresso
½ teaspoon unsweetened cocoa powder

Steps:

  • Cut off the tops of the strawberries and slice the berries. Reserve 2 large whole berries for garnish.
  • In a blender, place 2 cups of strawberries and 2 tablespoons confectioners sugar; blend to puree and set aside.
  • In a medium bowl, combine mascarpone cheese, 1/4 cup cream, 1/4 cup sugar, and liqueur; beat with an electric mixer on medium-high speed for 1 to 1 1/2 minutes until thickened.
  • Place 6 ladyfingers on a serving plate and brush each with approximately 1 teaspoon cold espresso coffee. Spread or pipe out 1/2 of the cheese mixture over the ladyfingers, and layer with half of the sliced strawberries.
  • Repeat with the next 6 ladyfingers, espresso, remaining cheese mixture, and sliced strawberries; top with remaining 6 ladyfingers.
  • In a small mixing bowl, combine 1/4 cup heavy cream with 2 tablespoons sugar; beat with an electric mixer on medium-high speed until just whipped, approximately 1 minute. Spread cream evenly over top layer of ladyfingers.
  • Dust cocoa over whipped cream, and garnish with 2 reserved strawberries. Pour strawberry puree onto two serving plates. Cut tiramisu in half, and place onto puree.

Another Tiramisu recipe. I decided to post it because it is a little different. Very easy and quickly put together. The majority of the time spent on this is the chilling time, but this is needed to let the flavors meld. Very light and refreshing.

4 cups strawberries
4 tablespoons brown sugar
100 g ladyfingers
6 tablespoons Grand Marnier or 6 tablespoons triple sec
6 tablespoons orange juice (freshly squeezed)
2 cups mascarpone or 2 cups ricotta cheese
4 egg yolks
2 teaspoons vanilla extract
2 tablespoons sugar
40 g pistachio nuts, coursley chopped

Steps:

  • Rinse, hull and half strawberries into a bowl(leave a few whole for decoration).
  • Fold in brown sugar and make sure strawberries are well coated.
  • Set aside.
  • Place lady finger in bottom of each desert bowl or line the bottom of an casserole dish (8x8).
  • In a small bowl mix the Orange liquior and the orange juice and drizzle over the ladyfingers.
  • In a separate medium bowl add mascarpone with fresh egg yolks, vanilla extract and sugar.
  • Mix well.
  • Fold in the strawberries.
  • Spoon on top of the lady fingers.
  • In a food processor coarsely chop pistachio nuts.
  • Sprinkle on top of Masdcarpone cream and strawberries.
  • Top with a whole strawberry.
  • Refrigerate at least 1 hrs to let the flavours meld.
  • The longer the better the flavor.
  • Enjoy.

This simpler version of a classic Italian tiramisu doesn't skimp on flavor thanks to the espresso, rum-soaked lady fingers and the mascarpone whipped cream. It's a no-bake dessert that's versatile enough to keep you warm and cozy with your boo on a wintry night or keep you cool in the summer thanks to the ease of preparation (no stovetop or oven required!) Make the tiramisu parfait-style in a clear glass and you'll feast with your eyes before you have a chance to savor the first bite!

1 tablespoon unsweetened cocoa powder
1/2 cup hot espresso or strong brewed coffee
1 tablespoon rum
2 teaspoons granulated sugar
1/3 cup mascarpone cheese
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
6 lady fingers (each cookie measuring about 4 1/2 by 1 inch)

Steps:

  • Sift about 1/3 of the cocoa powder into the serving glasses, dividing it equally between the two.
  • Combine the espresso, rum and granulated sugar in a small, wide bowl and stir until the sugar dissolves. (Make sure your espresso is hot, which will help the sugar dissolve.)
  • Beat the mascarpone cheese, heavy cream, confectioners' sugar and vanilla together in a large bowl until soft peaks form. Set the mascarpone cream aside.
  • Break a lady finger in half so that the two halves will fit snugly into your serving glass. Dip both sides of the halves into the espresso mixture. (Don't linger in the espresso-the delicate lady fingers will disintegrate!)
  • Place the lady finger pieces, hump-side up, in a layer in the serving glass. About two halves will fit in each layer. Top with about 2 tablespoons of the mascarpone cream and spread in an even layer. Sift in half of the remaining cocoa powder. Repeat the dipping and layering of the lady fingers and dolloping with the mascarpone cream until you reach the top of the serving glasses, finishing with the cream.
  • Dust the remaining cocoa powder on top of each glass in an even layer. Refrigerate until ready to enjoy and serve chilled.
