Time 2h30m

Yield 6 mini cakes

Number Of Ingredients 20

1 1/2 cups pitted dates, chopped
1 yellow banana
1 1/2 sticks butter, melted and cooled slightly
1 cup light brown sugar
2 tablespoons brandy
1 teaspoon vanilla extract
1/2 teaspoon salt
1 large egg, beaten
1 2/3 cups all-purpose flour, plus more for dusting the pan
1 teaspoon baking powder
1 teaspoon baking soda
Nonstick cooking spray
Granulated sugar, for dusting the pan
One 5-ounce can evaporated milk
1/2 cup light brown sugar
1/2 cup powdered sugar
1/3 teaspoon salt
2 tablespoons brandy
Ice water, as needed
2 tablespoons butter

Steps:

  • For the cakes: Cover the dates with boiling water and allow to rehydrate for 10 minutes, then drain and mash with the banana until smooth. Whisk in the melted butter, brown sugar, brandy, vanilla, salt and egg. Sift in the flour, baking powder and baking soda and stir until just combined.
  • Coat a 6-mini Bundt pan well with cooking spray, then coat with a 50/50 mixture of flour and granulated sugar. Tap the excess out, and divide the batter evenly among the cavities. Place in the refrigerator for 15 minutes. In the meantime, preheat the oven to 350 degrees F.
  • Line a baking sheet with aluminum foil, then place a wire cookie or roasting rack on top. Bake the cakes until they spring back when lightly touched, approximately 20 minutes. Place the pan on the prepared rack to cool for 5 minutes, then flip the pan upside down on the rack and let sit an additional 5 minutes. Gently lift the pan to release the cakes, then cool completely, about 30 minutes.
  • For the glaze: In a small saucepan, cook the evaporated milk and brown sugar together, stirring occasionally, until it becomes a thick caramel, about 10 minutes.
  • In a separate bowl, sift together the powdered sugar and salt, then whisk in the brandy. Add some ice water a teaspoon at a time until you have a glaze the consistency of maple syrup.
  • Whisk the butter and glaze into the caramel until smooth, and allow to rest to thicken slightly, 10 minutes. Carefully dip the tops of the Bundt cakes halfway into the caramel, then place them back on the wire rack so that the glaze can drip down and coat them completely. Allow the glaze to harden, about 15 minutes.

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 6

One 15.25-ounce box devil's food cake mix (plus required ingredients)
6 tablespoons unsalted butter, at room temperature, plus 2 tablespoons unsalted butter
1 cup marshmallow fluff
1 1/2 cups confectioners' sugar
1/3 cup plus 1 tablespoon heavy cream
4 ounces semisweet chocolate chips

Steps:

  • Prepare a 12-cup Bundt pan according to the cake mix package directions. Bake the Devil's food cake according to the package directions. Let cool completely.
  • Combine the softened butter and marshmallow creme in a large bowl and beat with an electric mixer until smooth and well combined. Add the confectioners' sugar and 1 tablespoon cream and beat until fluffy, about 3 minutes. Put the marshmallow creme mixture into a piping bag fitted with a long thin round tip.
  • Flip the cake so it is flat-side up and make 12 evenly-spaced holes in the bottom of the cake using a skewer, pressing only halfway down into the cake and wiggling the skewer slightly to widen the holes until they are each about 1 inch wide. Insert the piping tip in each of the hollowed-out holes and pipe in some marshmallow mixture until it starts to ooze out the top of the hole, reserving about 1/4 cup frosting for decorating the top of the cake. Flip the cake flat-side down onto a cake stand or serving platter.
  • Put the chocolate chips in a small heatproof bowl. Bring the remaining 1/3 cup cream to a boil in a small saucepan, then pour over the chips. Stir until the chips are melted, then stir in the remaining 2 tablespoons butter. Spoon over the cake and let cool until set, about 30 minutes. Pipe connecting loops over the top of the cake with the remaining frosting in the piping bag. Serve immediately or cover and refrigerate for up to 2 days.

STRAWBERRY CHEESECAKE-STUFFED POUND CAKE RECIPE BY TASTY

Strawberry Cheesecake-Stuffed Pound Cake Recipe by Tasty image

Here's what you need: pound cake, cream cheese, powdered sugar, lemon zest, strawberry

Provided by Joey Firoben

Categories     Bakery Goods

Yield 10 servings

Number Of Ingredients 5

1 pound cake, store-bought
8 oz cream cheese, 1 block, softened
½ cup powdered sugar
1 teaspoon lemon zest
1 cup strawberry, diced

Steps:

  • Cut the center out of the pound cake, leaving a half-inch border on the bottom and along each side.
  • In a medium bowl, use a hand mixer to beat together the cream cheese, powdered sugar, and lemon zest until the mixture is smooth.
  • Add the strawberries and beat until the mixture has turned a light pink color but there are still nice strawberry chunks.
  • Pour the cream cheese mixture into the hollowed-out pound cake shell.
  • Using the removed pieces of pound cake, crumble bits of cake on top of the cheesecake mixture to form a thick layer of crumbs. Refrigerate for at least 8 hours.
  • Be careful when filling the pound cake and when transferring to the refrigerator. Cutting the border too thin may cause the sides to spread too far once the cheesecake mixture is added. You can simply place the pound cake on a plate or tray before filling to make the transfer to the refrigerator easier. Use something to prop up the sides in case they've bowed out too much, to prevent breaking. Once the filling has set in the fridge, it will hold its shape.
  • Slice into 10 half-inch (1 cm) slices and serve.
  • Enjoy!

FARRAH'S JELLY-FILLED CAKE

Farrah's Jelly-Filled Cake image

This is my goddaughter Farrah's favorite cake and is very reminiscent of a jelly donut. This cake is very forgiving and can be made with any other flavored jam. Plan ahead because the cake needs to sit overnight for the flavors to meld.

cooking spray
1 (15.25 ounce) package butter cake mix
4 eggs
1 cup milk
½ cup butter, melted
1 cup seedless strawberry jam
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®).
  • Beat cake mix, eggs, milk, and butter until well combined. Pour into the prepared pan.

Provided by Ellie Holland

Yield 6 servings

Number Of Ingredients 15

1 ¼ cups hot water
4 earl grey teabags
2 ¾ cups medjool date, pitted
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¾ cup butter, room temperature
¾ cup caster sugar
¾ cup dark brown sugar
3 eggs
2 ¾ cups self-raising flour
1 cup butter
⅔ cup golden caster sugar
¾ cup dark brown sugar
½ cup dark rum
1 ¼ cups double cream

Steps:

  • In a small bowl, steep the teabags in the hot water for about 5-10 minutes.
  • Let cool and take the teabags out, keeping the water.
  • Pre-heat the oven to 180°C (350°F).
  • In a blender, blend the the medjool dates, cinnamon, nutmeg and teabag water to a smooth puree.
  • For the cake, in a large bowl add the butter and both sugars, cream together using a wooden spoon until light and fluffy.
  • Next, beat in the eggs one by one, using a metal spoon.
  • Fold in the flour, followed by the puree.
  • Pour into a thoroughly greased bundt cake tin and smooth out the top.
  • Bake in the oven for about 45 minutes, until golden brown and cooked through.
  • Prepare the caramel sauce by melting the butter and two sugars together in a saucepan over a low-medium heat.
  • Stir in the rum and double cream.
  • Bring to the boil and simmer for about 5 minutes.
  • Pour into a jug and leave to cool.
  • Once the cake is ready, flip onto a cooling rack.
  • Using a pastry brush, gently brush some of the caramel sauce all over the bundt cake so that it is completely covered. This will help keep the cake nice and moist.
  • Pour what's left of the caramel over the top of the cake.
  • Enjoy!

Tips:

  • Prepare the cake batter according to the recipe. Make sure to cream the butter and sugar together until light and fluffy, and then add the eggs one at a time, beating well after each addition. Finally, stir in the dry ingredients until just combined.
  • Prepare the filling according to the recipe. This typically involves mixing together a combination of cream cheese, sugar, butter, and vanilla extract.
  • Assemble the cake. Pour half of the cake batter into the prepared bundt pan. Then, spread the filling over the batter. Finally, pour the remaining cake batter over the filling.
  • Bake the cake according to the recipe. The baking time will vary depending on the size of your bundt pan, so be sure to check the cake for doneness before removing it from the oven.
  • Let the cake cool. Once the cake is done baking, let it cool in the pan for about 10 minutes before inverting it onto a wire rack to cool completely.
  • Make the glaze. While the cake is cooling, make the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth. If the glaze is too thick, add a little more milk. If the glaze is too thin, add a little more powdered sugar.
  • Glaze the cake. Once the cake is completely cool, pour the glaze over the top, allowing it to drip down the sides.
