Time 1h

Yield 1 9x13 inch cake

Number Of Ingredients 12

1 cup oil
1 1/2 cups sugar
1/2 cup milk
1 teaspoon vanilla
2 cups grated unpeeled zucchini
2 1/2 cups flour
1/2 cup cocoa
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
chocolate chips

Steps:

  • Preheat oven to 350F.
  • Mix first 5 ingredients together.
  • Mix next 6 ingredients in another bowl.
  • Combine.
  • Spread in a 9x13 inch pan.
  • Sprinkle with chocolate chips.
  • Bake for 45- 50 minutes.

Tips:

- To ensure optimal moisture and texture in your zucchini cake, select medium-sized zucchini and grate them with their skin on. - Before measuring your flour, fluff it up using a spoon or fork and scoop it out to prevent a dense cake. - If you desire a more pronounced chocolate flavor, opt for cocoa powder with a high percentage of cacao. Aim for a cocoa powder with a cacao content of at least 70% or even higher. - Replace granulated sugar with brown sugar for a moist and flavorful cake with a slightly caramelized taste. - Ensure your baking soda and baking powder are fresh to guarantee a proper rise for your cake. - To prevent over-mixing, blend the ingredients only until combined. Over-mixing can result in a tough, dense cake. - Bake the cake until a toothpick inserted into the center comes out clean. Over-baking can dry out the cake. - Allow the cake to cool completely before frosting it. This helps to prevent the frosting from melting. - For an extra chocolatey treat, sprinkle chocolate chips or cocoa powder on top of the frosting.

Conclusion:

Embark on a culinary adventure with this extraordinary chocolate zucchini cake, where the moist texture of grated zucchini harmonizes perfectly with the rich cocoa flavor. The touch of cinnamon and nutmeg adds depth and warmth to the cake, while the creamy frosting elevates it to an unforgettable dessert experience. Enjoy this delightful creation as a sweet treat at any occasion, be it a simple gathering or a special celebration.
