Yield 1 Bowl

Number Of Ingredients 7

1/3 cup dark-brown sugar
2/3 cup white granulated sugar
1 teaspoon kosher salt
1/8 teaspoon cayenne pepper
1 teaspoon ground allspice
1 1/4 and 1 1/2 pounds walnut, pecan halves, whole peeled hazelnuts, almonds or combination of raw nuts
1 egg white, room temperature

Steps:

  • Preheat oven to 300 degrees. Mix sugars, salt, cayenne, and cinnamon, making sure there are no lumps; set aside. Beat egg white until frothy but not stiff. Add nuts, and stir to coat evenly. Sprinkle nuts with sugar mixture, and toss until evenly coated. Spread sugared nuts in a single layer on a cookie sheet fitted with parchment paper. Bake for 30 minutes, stirring occasionally. Remove from oven, and separate nuts as they cool. When completely cool, pour the nuts into a bowl, breaking up any that stick together.

Tips:

  • Use fresh nuts. This will ensure that the nuts are crispy and flavorful.
  • Roast the nuts before candying them. This will help to bring out their flavor and make them more crunchy.
  • Use a variety of spices and flavorings. This will add depth of flavor to the candied nuts.
  • Don't overcrowd the pan when candying the nuts. This will prevent them from cooking evenly.
  • Cook the nuts until they are evenly coated in sugar. This will help to prevent them from sticking together.
  • Let the nuts cool completely before storing them. This will help to prevent them from becoming sticky.

Conclusion:
