SUGAR 'N' SPICE NUTS

To tell the truth, I can't recall where this recipe came from. It's been a regular in my holiday baking, though, for many years. Between Thanksgiving and New Year's, I hand these out to almost everybody-even the mailman's been known to find a batch in the mailbox! I moved from a big city as a bride. My husband soon persuaded me to enter baked goods at our county fair-now, our son, 8, is my cookie tester, and our daughter, 6, is the egg beater.

SUGAR-AND-SPICE CANDIED NUTS

Categories     Nut     Dessert     Bake     Cocktail Party     Super Bowl     Vegetarian     Kid-Friendly     Quick & Easy     Spice     Shower     Party     Gourmet     Kidney Friendly     Pescatarian     Wheat/Gluten-Free     Soy Free     Kosher     Diabetes-Friendly     Small Plates

Yield Makes about 2 1/2 cups

Number Of Ingredients 10

1 tablespoon unsalted butter plus additional for greasing parchment
1/4 cup sugar
2 tablespoons light corn syrup
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
Rounded 1/4 teaspoon kosher salt
2 cups mixed nuts
Special Equipment
parchment paper

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Line a large baking sheet with parchment paper and lightly butter parchment.
  • Stir together butter, sugar, corn syrup, spices, and salt in a 1 1/2- to 2-quart heavy saucepan and bring to a boil over high heat. Add nuts and cook, stirring constantly, 3 minutes. Spread nuts in 1 layer on lined baking sheet, separating any clumps. Bake, stirring nuts once with a heatproof rubber (silicone) spatula halfway through baking (keep nuts in 1 layer), until golden and bubbling, 12 to 15 minutes. Cool on baking sheet on a rack 45 minutes, then break into small clusters with your hands.

Tips:

  • Use fresh peanuts for the best flavor and texture. If you're using store-bought peanuts, make sure they're unsalted and unroasted.
  • Soak the peanuts overnight for a more tender texture. This step is optional, but it will help to reduce the cooking time and make the peanuts more flavorful.
  • Use a large enough pot so that the peanuts have plenty of room to move around. This will help to prevent them from clumping together and ensure that they cook evenly.
  • Keep the heat on low and stir the peanuts frequently. This will help to prevent them from burning and ensure that they cook evenly.
  • Don't overcook the peanuts. They should be slightly crunchy on the inside.
  • Add the sugar and spices to the peanuts while they're still hot. This will help the flavors to meld together.
  • Let the peanuts cool completely before serving. This will help them to set and become crispy.

Conclusion:

Sugar and spice peanuts are a delicious and easy-to-make snack that can be enjoyed by people of all ages. They're perfect for parties, picnics, or simply as a quick snack on the go. With just a few simple ingredients, you can create a tasty treat that everyone will love.
