Applesauce makes this cake exceptionally moist. It's delicious on its own or served with a scoop of vanilla ice cream. If you decide to use store-bought applesauce, choose one with a chunky texture.

APPLESAUCE CAKE

Applesauce Cake image

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

Time 1h5m

Yield 8 to 10 servings

Number Of Ingredients 13

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
  • In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.

Tips:

  • Use ripe apples: Using ripe apples will give your cake a sweeter, more flavorful taste. If you don't have ripe apples, you can peel and core them, then spread them out on a baking sheet and bake them at 350 degrees Fahrenheit for 15-20 minutes, or until they are softened.
  • Don't overmix the batter: Overmixing the batter will make your cake tough. Mix just until the ingredients are combined.
  • Use a bundt pan: A bundt pan will give your cake a beautiful shape and allow it to cook evenly.
  • Serve the cake warm or at room temperature: Applesauce cake is best served warm or at room temperature. You can also store it in the refrigerator for up to 3 days.

Conclusion:

Sugar-free applesauce cake is a delicious and healthy dessert that can be enjoyed by people of all ages. It is a great way to use up ripe apples and is a perfect snack or dessert for a party or potluck. With its moist texture and sweet flavor, this cake is sure to be a hit!
