Time 27m

Number Of Ingredients 10

1 1/2 cups Flour ( see post for gluten free alternative)
1 tsp Baking Soda
1 tsp Ground Cinnamon
3/4 cup Splenda
1/2 cup Surkin Gold
1 cup Butter
1 tsp Vanilla Extract
2 Eggs
3 cups Rolled Oats
1 cup Raisins

Steps:

  • Preheat your oven to 350. Prep a pan for nonstick- I use parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and ground cinnamon. Set this bowl aside.
  • Now in a mixing bowl, cream together the granular sugar alternative and the butter. Then add the vanilla and the eggs, gently stirring them into the mixing bowl
  • For the next step, we will add the dry ingredients from the first bowl (flour etc) to the mixing bowl. Do this by adding half of the dry ingredients at a time, mixing gently between additions. Then continue mixing the cookie dough until the ingredients are mixed together.
  • Next, stir in the oatmeal and raisins by hand. Bake these cookies for 10-12 minutes or until the edges begin to brown

Tips:

  • Use gluten-free oats. If you are celiac or gluten-sensitive, ensure you use certified gluten-free oats to avoid any adverse reactions.
  • Choose unsweetened almond milk. Sweetened almond milk can add unwanted sugar to your cookies. Unsweetened almond milk provides a neutral taste and allows you to control the sweetness level.
  • Don't overmix the dough. Overmixing can result in tough cookies. Mix just until the ingredients are well combined.
  • Chill the dough before baking. Chilling the dough helps the cookies hold their shape and prevents them from spreading too much.
  • Bake the cookies until the edges are golden brown. The centers of the cookies should still be slightly soft.

Conclusion:

These sugar-free, gluten-free oatmeal raisin cookies are a delicious and healthy treat that can be enjoyed by people with dietary restrictions. They are made with wholesome ingredients and sweetened naturally with honey, making them a guilt-free indulgence. Whether you are looking for a healthier alternative to traditional oatmeal raisin cookies or a gluten-free and sugar-free option, these cookies are sure to satisfy your cravings.
