2 cups granular no-calorie sucralose sweetener (e.g., Splenda ®)
2 large eggs

Steps:

1 ¼ cups finely chopped pitted dates
1 cup natural peanut butter
¼ cup almond milk
2 teaspoons vanilla extract
½ cup oat flour, or more as needed
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons raisins, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheet with parchment paper.
  • Combine dates and peanut butter in a food processor; process on high in 15-second intervals, gradually adding almond milk while processing, until mixture is smooth. Add vanilla extract and mix well.
  • Mix oat flour, baking soda, and salt together in a bowl. Mix date mixture into flour mixture, adding more oat flour if needed, until dough holds together. Form dough into balls, 1 to 2 tablespoons each, and arrange on the prepared baking sheets. Press a fork into each dough ball, dipping fork in water after each press. Gently press a few raisins into each one.
  • Bake in the preheated oven until edges are just beginning to turn golden, 8 to 12 minutes. Cool completely before eating.

So easy, delicious and healthy! I use unsalted natural peanut butter, and splenda... I am considering using a natural chocolate peanut butter blend i have found. Just found recipe today on allrecipes.com and tried 2 batches ... one with baking soda and vanilla, one without. I prefer one without...more gooey and less crumbly. I also put about 1/3 of a cup of oats in my non baking soda batch...i would have put vanilla in but I realized I forgot the vanilla...oops. I got 16 cookies using a tablespoon to measure out dough balls.

1 cup shortening, i prefer butter
1 cup peanut butter
1 1/2-2 cups Splenda sugar substitute
2 eggs
3 cups whole wheat flour, i use pastry flour
1/2 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon vanilla

Steps:

  • Cream shortening and peanut butter together I find that putting these ingredients together in a microwave safe bowl and microwaving for 30 seconds makes the mixing job a lot easier Add sugar and continue to cream together Add eggs and vanilla and beat In a separate bowl measure and add flour, salt, soda and baking powder together Sift dry ingredients to creamed mixture and mix thoroughly.
  • The mixture will be crumbly but stick together if pressed with hands.
  • Optional: Chill dough in refrigerator for several hours Shape dough into balls about 1 inch in diameter Space evenly on cookie sheet Press flat with fork Bake at 375 for 12 to 15 minutes.
