GAME DAY BURGERS

1 red onion, sliced into 1/3-inch rounds
1 teaspoon olive oil
1/4 teaspoon kosher salt
1 tablespoon balsamic vinegar
1/2 teaspoon sugar
2 ripe avocados, pitted and diced
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 pounds ground chuck (80/20 meat to fat)
1 1/2 teaspoons kosher salt
6 thin slices provolone piccante
2 cups arugula
6 potato hamburger buns, toasted
2 tomatoes, sliced thin, optional

Steps:

  • For the onions: Preheat a grill pan over medium-high heat.
  • Drizzle the onion slices with the olive oil and sprinkle with the salt. Place in the hot grill pan and cook, 2 to 3 minutes per side. Remove to a bowl and toss with the balsamic and sugar. Cover the bowl with a piece of plastic wrap and let steam at room temperature for about 10 minutes.
  • For the avocado: Mash together the avocado, lemon juice, salt and pepper flakes in a medium bowl.
  • For the burgers: Heat the grill pan over medium-high heat. Form the beef into 6 even patties (about 1/3 pound each). Sprinkle the patties evenly on both sides with salt and place in the grill pan. Grill until nicely browned, about 2 minutes on the first side. Flip the burgers and cook for an additional 2 minutes. Place a slice of cheese on top of each burger and cover with a bowl or lid to allow the cheese to melt. Cook to desired doneness, about 1 minute longer for medium.
  • Place a small amount of arugula on the bottom half of each toasted bun. Top with the patties, tomatoes, if using, and the grilled balsamic onions. Spread some of the avocado on the top half of the buns and close the burgers.

2 lbs ground beef
2 (1 ounce) packages dry onion soup mix
2 potatoes, peeled and shredded
1 cup shredded swiss cheese
1 cup chopped mushroom

Steps:

  • Preheat grill for high heat.
  • In a medium bowl, mix together potato, cheese, and mushrooms.
  • In a large bowl, mix hamburger with onion soup mix; form into patties.
  • Make a pocket in each hamburger, stuff with potato mix, and seal.
  • When ready to grill, brush grate with oil.
  • Cook over high heat for 3 to 5 minutes on each side.
  • Serve hot.

1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
1 tablespoon mayonnaise
1 (1 ounce) package dry onion soup mix
24 (2 inch square) dinner rolls, split

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, thoroughly mix ground beef chuck, Cheddar cheese, mayonnaise and dry onion soup mix.
  • Spread even amounts of the ground beef onto the bottom half of each roll. Place top halves on, forming little sandwiches. If you purchased the rolls in aluminum foil pans, you may return them to the same pan for baking. Otherwise, place them on a baking sheet or baking pan. Cover the pan tightly with aluminum foil.
  • Bake for 30 to 35 minutes in the preheated oven, or until meat is cooked through.

1 pound ground beef (preferably 80% lean)
1 teaspoon canola oil
1 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
4 hamburger buns, split
Optional: Mayonnaise, sliced American cheese, sliced tomato, dill pickle slices, lettuce, ketchup and yellow mustard

Steps:

  • Place a 9-in. cast-iron skillet over medium heat. Meanwhile, gently shape beef into 4 balls, shaping just enough to keep together (do not compact). , Increase burner temperature to medium-high; add oil. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness; sprinkle each with 1/8 teaspoon salt and pepper. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers and sprinkle with additional 1/8 teaspoon salt and pepper. Cook until well browned and a thermometer reads at least 160°, 1 minute. Repeat with remaining beef., Serve burgers on buns with toppings as desired.
