3 lbs chicken (cut into bite-sized pieces)
2 garlic cloves (more, to taste)
1 medium onion
2 tablespoons masala (store-bought, your own recipe or Recipe #82968 or Recipe #174350) or 2 tablespoons curry powder (store-bought, your own recipe or Quick Garam Masala or Hot Madras Curry Powder)
4 tablespoons sunflower oil or 4 tablespoons corn oil
chili peppers (optional) or jalapeno, to taste (optional)
1/2 teaspoon sugar
salt, to taste
water

Steps:

  • Heat the oil; add the onion and garlic, fry until translucent (take care not to scorch)
  • Add the masala powder or curry powder and stir in well.
  • Add the chicken with the peppers, sugar and salt (to taste)
  • Stir well until chicken is coated with onion/garlic mixture; add just enough water to cover the chicken.
  • Cover and cook over medium heat until tender.

2 ¼ pounds skinless, boneless chicken thighs, cut into chunks
2 teaspoons curry powder
½ teaspoon garam masala
1 teaspoon salt
2 onions, chopped
1 tablespoon minced garlic
1 teaspoon minced fresh ginger root
½ teaspoon cayenne pepper
2 teaspoons paprika
2 tablespoons water
5 teaspoons corn oil
2 tomatoes, chopped
1 teaspoon minced lemon grass
1 tablespoon fish sauce
1 cup water

Steps:

  • Rub chicken thighs with curry powder, garam masala, salt. Cover and set aside. Place onion, garlic, ginger, cayenne pepper, and paprika in a blender with 2 tablespoons of water and blend into a smooth paste.
  • Heat the oil in a large, lidded skillet over medium heat. Cook and stir onion mixture until darkened, about 7 minutes. Stir in chicken thighs and cook for 3 to 4 minutes, then add tomatoes, lemon grass, and fish sauce. Cook for 2 minutes. Stir in 1 cup of water and bring the curry to a boil. Cover and reduce heat to low and cook until the chicken begins to fall apart, stirring occasionally, 25 to 35 minutes. Remove lid and increase heat. Cook until the sauce is reduced, about 5 minutes. 2 tablespoons oil
3 bay leaves
1 -2 big potato
1 big carrot, cut into pieces
1 (13 1/2 ounce) can coconut milk
2 teaspoons sugar

3 ounces water

  • Place chopped onions into a pan. Add in the 2 tbls of oil and cook on medium high heat until onions are transparent.

water, for boiling potatoes
3 tablespoons olive oil
5 tablespoons curry powder, divided
4 lb boneless, skinless chicken breast, cut into 3 inch (7.5 cm) cubes
1 onion, finely chopped
10 oz frozen peas, 1 bag
2 red bell peppers, chopped
1 lb green beans, ends trimmed
4 carrots, chopped
1 jalepeno, chopped
1 tablespoon black pepper
1 tablespoon salt
jasmine rice, cooked, for serving
fresh parsley, chopped, for serving

Steps:

  • In a bowl, add the potatoes, and fill the bowl with water until the potatoes are covered. Microwave on the potato setting for 10 minutes. The potatoes are done when you can pierce through them with a fork. Leave in water, and set aside until ready to use.

6 skin-on, bone-in chicken thighs (2½ pounds)
2 tablespoons lime juice
2 tablespoons minced garlic
2 tablespoons minced ginger
2 1/2 teaspoons ground white pepper
Fine salt
1/4 cup ghee or canola oil
1 medium red onion, thinly sliced
1 cinnamon stick, preferably Indian
3 cardamom pods
1 whole star anise
4 whole cloves
4 fresh or 8 thawed frozen pandan leaves, knotted
2 teaspoons Kashmiri chile powder or other ground red chile
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground fennel
2 cups low-sodium chicken stock
1/4 cup coconut milk

Steps:

  • Pat the chicken thighs dry with paper towels and combine with the lime juice, 1 tablespoon garlic, 1 tablespoon ginger, 1½ teaspoons white pepper, and 1 ½ teaspoons salt in a large bowl. Mix well, cover and refrigerate for 40 minutes.

Stir in the coconut milk and simmer briskly to concentrate the flavors, 5 to 8 minutes. Add salt to taste. Turn off the heat and use the curry to prepare nasi biryani.
