1 cup raisins
1/4 cup dark rum (recommended: Myers's)
1 1/2 loaves stale French or Italian bread, torn into pieces
3 cups milk
3 eggs, slightly beaten
1/2 cup butter, melted
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 cup heavy cream or 1 cup evaporated milk
1 cup sugar
3/4 cup brown sugar
2 tablespoons molasses
2 teaspoons lemon zest
1/2 teaspoon salt
1 1/2 cups sugar
5 ounces evaporated milk
4 tablespoons margarine
1 egg, beaten
2 egg yolks, beaten
3 tablespoons dark rum (recommended: Myers's)

Steps:

  • Place raisins in a small bowl with rum and soak for a couple of hours. Drain raisins and reserve soaking liquid.
  • Place bread pieces in a 9 by 12-inch baking dish. Add raisins to dish. In a large bowl, combine the milk, eggs, butter, cinnamon, vanilla, heavy cream, sugar, brown sugar, molasses, lemon zest, and salt, and mix well to ensure the sugar has been dissolved. Add the reserved raisin soaking liquid to the milk mixture and pour over bread. Let sit until bread has soaked up all of the milk mixture for at least 1 to 2 hours.
  • Preheat oven to 350 degrees F.
  • Place baking dish in another large pan and add water about halfway up the sides of the baking dish. Bake for 1 hour or until bread pudding has set. Remove bread pudding from oven and let cool to just warm.
  • While bread pudding is cooling, make Rum Sauce:
  • Combine sugar, evaporated milk, margarine, egg and yolks in the top of a double boiler and cook, stirring well, until thick. Do not let sauce boil. Keep warm until serving time. Whisk in rum just before serving. Serve bread pudding with sauce.

Two 12.4-ounce tubes refrigerated cinnamon rolls
Nonstick cooking spray, for the pan
One 15-ounce can fruit cocktail in syrup
1 1/4 cups whole milk
1/4 cup chopped pecans
1/4 cup chopped walnuts
1/2 teaspoon vanilla extract
4 large eggs, beaten
1 tablespoon whole milk
2 teaspoons espresso powder
Cinnamon sugar, for dusting
4 cups coffee, brewed how you like it!

Steps:

  • For the rolls: Bake the cinnamon rolls according to the package directions (reserve the glaze). When they are cool enough to handle, cut each into fourths. Set aside.
  • Preheat the oven to 350 degrees F. Coat the bottom and sides of a deep 8-inch square pan with cooking spray.
  • In a large bowl, add the fruit cocktail, milk, pecans, walnuts, vanilla extract and eggs and mix together. Add the cinnamon roll pieces and stir. Let rest for a few minutes to allow the liquid to soak in.
  • Pour the cinnamon roll mixture into the prepared pan. Bake until golden on top, 25 to 30 minutes.
  • For the glaze and topping: Put the milk in a small microwave-safe bowl and microwave for 30 seconds. Add the espresso powder and stir until the granules dissolve. Add the reserve glaze from the cinnamon rolls and stir until combined.

So simple and yet so tasty!! It travels well for bringing to parties. Eat hot, cold or a sliced portion from the freezer microwaved with maple syrup as you would a dutch apple pancake. Apples are my favorite thing to add to this but there are endless possibilities.

- 1/3 cup sugar (brown or white or a mix of both)

- **optional ingredients....apples, bananas, cranberries, blueberries, strawberries, dates, oatmeal, coconut and anything else tasty you can think of!

  • This is so simple and so good. It is great both hot and cold or microwaved a serving from the pan straight from the freezer. It will keep for a long time if it doesn't get eaten first. I have experimented through the years with adding a number of different things to this basic bread pudding recipe. I usually add apples and make a double batch using a whole loaf of Pepperidge Farms cinnamon raisin bread. I increase the cooking time to an hour and a half when I make a double batch. The test for doneness is when a toothpick inserted in the middle comes out clean like a cake. You can also tell because all of a sudden it will look like a quiche and poof up. It will slowly sink as it is cooled after baking. I have used cranberries, apples, bananas, oat meal for added fiber, blue berries, dates and cream cheese....just to name a few ingredients. I usually make the double batch and then freeze it. You can individually when frozen cut slices and top with maple syrup and microwave and eat it for breakfast. Use microwaved bread pudding as a base for a scoop of ice cream for a tasty desert. It is so simple and has good ingredients in it but tasty!! Suzy's Bread Pudding (single batch) Beat together 4 eggs, 2 cups of milk, 1/3 cup of sugar (can use brown and white sugar or all brown), 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of vanilla, and 1/4 teaspoon of salt. Place 1/2 a loaf of cubed Pepperidge Farm Cinnamon Raisin bread in a square 9x9 pan. (the pan doesn't have to be greased). Pour egg mixture over all. Bake 325 for 40 to 45 minutes or until tooth pick comes out clean.

I love bread pudding, but in New Orleans they do savory ones to accompany meat-centric dishes. Not the lightest of fare, but the mushroom duxelles makes the day.

1 stick (8 tablespoons) unsalted butter, softened, plus more for greasing the pan
4 large eggs
1 cup heavy cream
3 ounces cognac
Sea salt and cracked black pepper
1 sourdough batard, such as Acme bakery loaf, cut into 1/2-inch-thick slices
12 ounces fresh king trumpet mushrooms
3 shallots, peeled and halved
2 tablespoons olive oil
1 spring onion, peeled and sliced thinly

Steps:

  • Preheat the oven to 400 degrees F. Grease a 3-quart casserole dish with butter.
  • Whisk the eggs, heavy cream, cognac and some salt and pepper in a large bowl. Place the bread slices into the egg-cream mixture and let sit for 5 minutes.
  • Cut the mushrooms into large dice and add to food processor along with the shallots and process until finely, finely chopped. Put a large cast-iron pan over medium-high heat and add 4 tablespoons of the butter. Once the pan is heated, add the mushroom/shallot mixture and cook until browned, about 5 minutes.
  • Turn the heat under a medium cast-iron pan to medium-high and add the oil. Once heated, add the sliced spring onion and sear until browned on both sides, about 5 minutes total.
  • To assemble, first put a third of the bread in the prepared casserole dish, then half of the mushroom duxelles, half of the seared onion and another third of the bread. Press down and top with the remaining mushroom duxelles and onions. Top with the remaining bread and dot with the remaining 4 tablespoons butter. Put into the oven and bake until golden brown, about 15 minutes.

1 tablespoon Dijon mustard
4 cups old/stale focaccia, or any artisanal bread such as baguette or sourdough, cubed into 1-inch pieces (tip: toast the bread if it's not stale)
Zest of 1/2 lemon
1 scallion, sliced
3 ounces baby spinach leaves (can also use shredded kale)
3/4 cup grape tomatoes, halved lengthwise
1 teaspoon whole fresh rosemary leaves
1 tablespoon whole fresh flat leaf parsley leaves
1/2 cup crumbled feta or goat cheese (use block feta in brine if using feta for more flavor)
Kosher salt and fresh coarsely ground black pepper
1 tablespoon avocado oil, or you can use grapeseed or canola

Steps:

  • Preheat the oven 450 degrees F.
  • In a small bowl, whisk together the milk, eggs, mayonnaise and Dijon. Pour the mixture over the cubed bread in a large bowl. Mix together to coat all the bread cubes (I use my hands for this and squeeze bread to ensure each piece is well saturated). Add the lemon zest, scallions, spinach, tomatoes, herbs and feta. Season with salt and pepper. Toss well again, ensuring all the bread is well soaked. Place a cast-iron skillet over medium-high heat. Add the avocado oil.
  • Once the oil is hot, spread the mixture into the skillet, pressing down with your hands to evenly distribute. Cook until the bread pudding forms a crust on the bottom, 4 to5 minutes. Transfer to the oven and bake until the top is golden brown and the pudding is set, about 13 minutes. Eat and enjoy!

500g/1lb 2oz mixed dried fruit
85g mixed peel
1½ tbsp mixed spice
600ml milk
2 large eggs, beaten
140g light muscovado sugar
zest 1 lemon (optional)
100g butter, melted
2 tbsp demerara sugar

Steps:

  • Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
  • Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
  • Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
  • Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
  • Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
  • Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 2-quart casserole or baking dish.

Steps:

  • Preheat oven to 350°F.
