Crisp autumn apples dipped into homemade apple cider caramel...made with cider, honey, and a touch of bourbon. Each caramel apple is then drizzled generously with chocolate, and finished off with a sprinkle of flaky sea salt.

6-8 apples, I love using honeycrisp
1 cup apple cider
1 cup heavy cream
2 1/2 cups granulated sugar
1/2 cup honey
4 tablespoons salted butter, at room temperature
2 tablespoons bourbon (optional)
2 teaspoons vanilla extract
1/2 cup semi-sweet or dark chocolate, melted

Steps:

  • 1. Insert wooden twigs into the apples. Line a baking sheet with parchment.2. In a large saucepan, combine the apple cider, heavy cream, sugar, and honey. Bring to a boil over medium-high heat, stirring occasionally until the mixture reaches 240 degrees F. on a candy thermometer, about 12-14 minutes total. 3. Remove from the heat and carefully stir in the butter, bourbon, and vanilla. Return to high heat and bring the mixture to 235-245 degrees F. Remove from the heat.4. Very carefully transfer the caramel to a heat proof bowl and let stand 2-3 minutes. 5. Swirl apples in caramel, allow the excess caramel to drip off. Place each apple on the prepared baking sheet. Repeat with remaining apples.6. Let the caramel apples set for about 15-30 minutes (in the fridge or on the counter), then drizzle each apple with melted chocolate. Dig in and get messy! Apple will keep for about a week in the fridge.

10 medium tart apples
10 Popsicle sticks
2-1/4 cups packed brown sugar
2 cups half-and-half cream
1 cup light corn syrup
1 cup butter, cubed
1 teaspoon vanilla extract
2 tablespoons sugar
1 tablespoon ground cinnamon
2-3/4 cups white baking chips
3 tablespoons shortening

Steps:

  • Wash and dry apples; remove stems. Insert Popsicle sticks into the bottoms of apples. Place on a buttered baking sheet; refrigerate until ready to use., In a large heavy saucepan, combine the brown sugar, cream, corn syrup and butter. Bring to a boil over medium-high heat. Cook and stir until a candy thermometer reads 248° (firm-ball stage), about 50 minutes. Remove from the heat; stir in vanilla. Dip apples into the hot caramel to completely coat. Place on prepared pan; let stand until set., In a small bowl, combine sugar and cinnamon; set aside. In a microwave, melt white chips and shortening; stir until smooth. Dip one caramel apple into the warm white chip mixture and immediately sprinkle with cinnamon-sugar. Place on a waxed paper-lined baking sheet. Repeat.

4 Granny Smith apples
18 soft caramels
1 ounce bittersweet chocolate
30 salted mini-pretzels, crushed (about 1 cup)

Steps:

  • 1. Insert a wooden Popsicle stick or chopstick into stem end of each apple. Cook caramels and chocolate in a double boiler over medium heat, stirring often, until melted, about 20 minutes. Place pretzels in a bowl. Dip bottom halves of apples into caramel mixture; twirl to coat. Roll bottoms in pretzels, place on serving plate lined with wax paper, and refrigerate until caramel coating is firm, about 20 minutes.

6 each wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
½ teaspoon vanilla extract
1 ½ tablespoons coarse sea salt
1 cup semisweet chocolate chips

Steps:

  • Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
  • Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan. Place on the aluminum foil. Sprinkle lightly with the coarse salt and chill.
  • Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.
