This is a rich and sweet kugel although they also come in a savory version.

1 (12 ounce) bag egg noodles
1 (16 ounce) container sour cream
12 ounces farmer cheese
1 cup white sugar
1 cup unsalted butter, melted and cooled
6 large eggs, beaten
1 large apple - peeled, cored, and diced
¼ cup golden raisins, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
  • While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.
  • Bake in the preheated oven until slightly golden brown and custard has set, about 1 hour. Cool for 10 to 15 minutes before serving.

Steps:

  • Cook noodles and drain.
  • Mix together next nine ingredients.
  • Add cooked noodles.
  • Pour into greased 9 x 13 inch pan.
  • Mix the topping ingredients together and sprinkle over kugel.
  • If desired, you may increase the amount of topping ingredients proportionately to make an even sweeter, crunchier top.

SWEET POTATO AND APPLE KUGEL

I've looked at a number of sweet potato kugel recipes, and experimented with this one a few times until I was satisfied with it. The trick is to bake the kugel long enough so that the sweet potato softens properly without the top drying out and browning too much. I cover the kugel during the first 45 minutes of baking to prevent this. After you uncover it, it's important to baste the top every 5 to 10 minutes with melted butter.

2 large sweet potatoes (1 3/4 to 2 pounds total), peeled and grated
2 slightly tart apples, like Gala or Braeburn, peeled, cored and grated
1 tablespoon fresh lime juice
1 tablespoon mild honey or agave nectar
3 to 4 tablespoons melted unsalted butter, as needed

Steps:

  • Heat the oven to 375 degrees. Butter a 2-quart baking dish
  • In a large mixing bowl, beat the eggs with salt to taste (I suggest about 1/2 teaspoon). Add the grated sweet potatoes and the apples. Pour the lime juice over the grated apples and sweet potatoes, then stir everything together. Combine the honey and 2 tablespoons of the melted butter and stir together, then toss with the sweet potato mixture and combine well
  • Transfer the mixture to the prepared baking dish. Cover the dish tightly with foil and place in the oven. Bake 45 minutes. Remove the foil and brush the top of the kugel with melted butter. Return to the oven and bake for another 15 to 20 minutes or longer, brushing every 5 minutes with butter. The kugel is ready when the edges are browned, the top is browned in spots and the mixture is set. Remove from the heat and allow to cool for 10 to 15 minutes before serving

I usually don't like Passover kugels and my family only likes sweet kugels...this one fit the bill! If you don't have farfel, it's really just tidbit-size pieces of matzah. I leave out the nuts, but every Passover recipe seems to have them, it's your choice!

5 eggs, beaten
½ cup white sugar
1 teaspoon salt
½ cup kosher margarine, melted
2 large apples - peeled, cored and shredded
2 very ripe bananas, mashed
½ cup ground walnuts, divided

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x13 baking dish.
  • Moisten the matzo farfel by placing in a large bowl, stirring in enough cold water to cover, and rinsing immediately in a colander set in the sink. Mix in beaten eggs, sugar, salt, and margarine until thoroughly combined, and lightly mix in the apples, bananas, and 1/4 cup of ground walnuts. Spoon the kugel into the prepared baking dish, and sprinkle with remaining 1/4 cup of ground walnuts.

There are no measurements for the nutmeg and cinnamon...I just sprinkle a light dusting on the top of the noodles prior to mixing it all together. The photos I've posted show the kugel before baking, after baking and sliced and ready for serving.

1 (1 lb) package noodles, cooked and drained
6 eggs, beaten
1 (8 ounce) package cream cheese
1 1/2 lbs cottage cheese
1 (16 ounce) jar applesauce (I use cinnamon flavored)
1 cup white raisins
1 1/2 cups sugar
nutmeg
cinnamon
1/2 cup butter, melted
frosted flakes, crushed (enough to cover kugel)

Steps:

  • Mix drained noodles with eggs, cream cheese (see note), cottage cheese, applesauce, raisins, sugar and spices.
  • Melt butter in a 9 x 13" baking dish.
  • Add noodle mixture.
  • Topping: Mix frosted flakes with enough butter to moisten.
  • Sprinkle on top of kugel.
  • Cover kugel with foil and bake at 350 degrees for 1 hour.
  • Uncover and bake 30 minutes longer checking frequently so top does not burn.

This is a very unique dish that can be found all over Jerusalem. It is a noodle casserole with carmelized sugar and lots of black pepper. Serve this warm as a different kind of side dish. I originally got this recipe from a community cookbook that was given to me along with all the other brides that got married that same year. Recipe is from Susie Gale with only a minor change.

3/4 cup oil
1 cup sugar

Frosted Flakes cereal (enough to cover kugel)

  • 1. Boil egg noodles for 5-6 minutes and drain.
  • 2. While noodles are in the drainer, in the warm pot melt cream cheese. Add cottage cheese and drained noodles. Mix well.

12 oz wide egg noodles
6 large eggs
2 c sour cream
1 c cottage cheese
8 oz cream cheese
1 c sugar
1/4 c (1/2 stick) unsalted butter, melted
1/4 tsp salt

Steps:

  • 1. Bring a large pot of water to a boil; add the noodles, bring back to a boil and let them cook till tender, about 5 minutes. Drain and return to the pot.
  • 2. In a food processor or blender, mix together the eggs, sour cream, cottage cheese, cream cheese, sugar, melted butter, and salt. Pour the egg mixture over the cooked noodles in the pot and stir till well combined.
  • 3. Spray a 9x13-inch baking dish with nonstick cooking spray. Pour the noodle mixture into the dish. Top the kugel by sprinkling generously with sugar and lightly with cinnamon. Or you can use your favorite topping: streusel, crushed graham crackers, cornflakes, etc.
  • 4. Bake the kugel in a preheated 350-degree oven on a center rack for about 60 minutes, turning once halfway through cooking, till the center of the kugel is set and the tips of the noodles turn golden brown.
  • 5. Remove from the oven. Let the kugel rest for 15-20 minutes before slicing. Kugel can be served warm or cold.
  • 6. NOTE: If you prefer a savory kugel, simply omit the sugar and the sweet toppings. Use buttered bread or cracker crumbs instead for topping.

1 1/2 cups warm water
32 ounces canned sliced Peaches, drain syrup
5 ounces pitted, chopped dates, coarsely chopped

1/2 teaspoon ground nutmeg
1/2 cup sugar
12 tablespoons butter
8 ounces plain yogurt
8 ounces cottage cheese with pineapple
Topping
1/2 cup chopped walnuts
1/4 teaspoon cinnamon
1/2 cup Peach/date mixture

Steps:

  • Preheat oven to 350 F Grease 13"X9" baking pan Measure Farfel into large mixing bowel, reserving 1/4 cup on the side. Add 1 1/2 cup warm water to farfel and completely dampen. Set aside. Slice drained peaches into smaller chunks (cut each peach into 3 or 4 pieces). POur into small bowel. Mix chopped dates in with peaches. Set aside. Melt 8 tablespoons (1 stick) of butter in a small sauce pan. Transfer to a large mixing bowel. Cool slightly and whisk eggs into butter, one at a time. Add nutmeg and sugar, whisk until blended. Beat in yogurt and cottage cheese. Add peaches and dates, reserving 1/2 cup for the topping. Mix damp farfel into egg/cheese/fruit mix. Break up clumps of farfel and pour mixture into greased baking pan. Prepare topping by melting 4 tablespoons butter (1/2 stick) either in small pan or small microwave bowel), mix in chopped walnuts, reserved peach/date mixture, cinnamon and reserved 1/4 cup farfel. Spoon over top of farfel mixture in baking pan. Bake in center of oven for 45 minutes or until slightly puffed. Remove from oven, cool for 30 minutes. Slice and serve.

  • Preheat oven to 400°F. Wrap sweet potatoes individually in foil and roast in the oven until soft and completely cooked through, about 1 hour and 10 minutes. Let cool completely. In a very large bowl, beat eggs, then add brown sugar and beat just until combined. Add cottage cheese, melted butter, and the sweet potato puree, then mix with a rubber spatula until combined. Finally, add salt and the cooked noodles, and mix with a spatula until combined. Pour noodle mixture into a 9x13-inch baking dish. Bake uncovered for 50 minutes (if noodles start to brown during this time, cover your baking dish with foil). 12 ounces egg noodles
4 1/2 cups water
1 cup brown sugar
1 teaspoon black pepper
1/2 teaspoon salt
2 eggs, beaten
1/3 cup oil (preferably walnut, but corn or peanut will work)

Steps:

  • Preheat oven to 350.
  • Boil the water, sugar, oil, pepper, and salt together.
  • Remove from source of heat.
  • Add noodles and stir.
  • Let stand for precisely 15 minutes.
  • Add beaten eggs.
  • Turn into an 8x10 pyrex baking dish.
  • Bake approximately 1 hour or until the kugel is brown all around.

This was passed down to me from my mom. It has lots of fond memories. My boys love it and even their wives love it. I hope you enjoy it to. Don't forget fine noodles.

1 bag fine noodles cooked
12 eggs
1 c sugar
1 stick margarine or butter
16 oz sour cream (light if you want)
8 oz cream cheese (light if you want)
1/2 ++ tsp vanilla
1+++ tsp cinnamon
2++ c raisins (soaked) or chocolate chips or whatever

Steps:

  • 1. First cook noodles and put into a large pan. When taking it I use the $1 throw aways. While the noodles are cooking put 1/2 of the remainder (except the raisins) ingredients into the blender. Pour over the noodles. Stir around very gently. Do same with rest of the ingredients. Then put the the raisins into this mixture. Sprinkle with cinnamon sugar mixture.
  • 2. Bake 350 deg. for 1 hr. Let cool before cutting.
  • 3. Forgot to say preheat oven but we all knew that. I was a bit nervous I guess.
