SWEET POTATO AND APPLE HOBO PACK

Sweet Potato and Apple Hobo Pack image

The hobo pack, a self-contained, foil-wrapped meal cooked in hot coals, is an easy option for outdoor cooking. Though this recipe includes a lot of fall flavors, it is great for summer cookouts, a change from the usual suspects. The key to success is to be sure the foil packet is tightly sealed so no juices leak out. Be aware that the intense heat of the coals will deeply char some of the food that's right up against the foil, but to us that's the best-tasting part.

Time 45m

Yield 4 servings

Number Of Ingredients 9

1/4 cup golden raisins
3 tablespoons Cognac
2 sweet potatoes, peeled and quartered lengthwise
2 Golden Delicious apples, unpeeled, cored and quartered
1 large red onion, peeled and sliced thin
1/4 cup finely chopped sage
4 tablespoons butter
1 tablespoon orange zest (about 1 orange)
Salt and pepper

Steps:

  • Build a fire in the grill. Let the fire die down, until the coals are covered with gray ash.
  • Put the golden raisins and Cognac in a small bowl and soak for 10 minutes.
  • Tear off 8 sheets of heavy-duty foil, each about 2 feet long, and divide them into 2 stacks. Place half the sweet potato quarters, apple quarters, onion slices and sage in the center of the top sheet in each stack. Dot each with half the butter and half the raisins, plus the orange zest and salt and pepper to taste. Fold the top sheet in each stack over the vegetables, rotate each package one-quarter turn, and fold the second sheet over it. Repeat with remaining 2 sheets of foil.
  • Place the packs in the coals around the periphery of the fire. Pile up the coals around the pack and cook 30 minutes.
  • Remove the pack from the coals, unwrap and check: If the sweet potatoes need more time, put the pack back in the coals or in a 300-degree oven until the potatoes are easily pierced with a fork but give a bit of resistance.

2 sprigs fresh rosemary, picked and finely chopped
1/2 cup coarsely chopped walnuts
Juice of 1/2 lemon
2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
3 Honeycrisp or Granny Smith apples

Steps:

  • Serve immediately or keep in a warm oven and serve hot.

PORK CHOP PACKS

Time 1h

Yield 2

Number Of Ingredients 4

2 (1 1/4 inch thick) pork chops
2 large sweet potatoes
2 slices onion
2 apples - peeled, cored and sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lay out a piece of aluminum foil large enough to hold the ingredients. Place the pork chops, on the foil, then place the sweet potato, onion and apple over the chops. Fold up and seal each package.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until the potato is soft when pricked with a fork. (Note: Do not open packages while baking as this will allow the steam to escape and will dry out the pork chops. Also, be careful when opening as the steam can burn.)

CRANBERRY, APPLE, AND SWEET POTATO PACKET

Cranberry, Apple, and Sweet Potato Packet image

This is a great vegetable combination to accompany your fall and winter meals. It is baked in a foil packet which cuts down on the clean-up. The packet may be baked or grilled depending on the rest of your meal. When you open the packet, the burst of aroma you get will sweep you off your feet! Note that vegetables are grilled in a single packet; but when meat is involved, single serving packets are made. Recipe is from Reynolds. You will use 1 sheet (18 X24 inches) of Reynolds Wrap Heavy Duty Aluminum Foil.
