MIMI'S SWEET POTATOES IN ORANGE CUPS
My mother made these every year for the holidays. I have made them for a church fellowship dinner, using 100 oranges. They were a big hit! Little kids can hold them in their hands and walk around without spilling. You can prepare this up to three days ahead of time and it travels well. There's an extra bonus: The orange sections can be used for making delicious ambrosia.

Tips:
- Choose the Right Sweet Potatoes: Select firm and evenly-shaped sweet potatoes. Avoid any with blemishes or soft spots.
- Use a Sharp Knife: To ensure clean cuts and prevent the sweet potato from breaking apart, use a sharp knife when slicing and dicing.
- Don't Overcrowd the Pan: When roasting the sweet potato cups, make sure not to overcrowd the pan. This will ensure even cooking and prevent steaming.
- Roast at High Heat: Roasting the sweet potato cups at a high temperature will help caramelize the edges and create a crispy texture.
- Add Flavorful Fillings: Experiment with various fillings to create unique and delicious sweet potato cups. Some popular options include roasted vegetables, sautéed greens, pulled pork, or a combination of your favorites.
- Use Fresh Orange Juice: Fresh orange juice provides a bright and tangy flavor to the glaze. For the best results, use freshly squeezed orange juice.
- Control the Glaze Consistency: If the glaze becomes too thick, add a small amount of water or orange juice to thin it out. Conversely, if the glaze is too thin, simmer it for a few minutes to reduce and thicken.
- Garnish for Presentation: Before serving, garnish the sweet potato cups with fresh herbs, such as cilantro or parsley, for an extra touch of color and flavor.
Conclusion:
Sweet potato orange cups offer a delightful combination of flavors and textures, making them a versatile and enjoyable dish. With their naturally sweet and savory taste, roasted sweet potato cups provide a perfect vessel for a variety of fillings, while the tangy orange glaze adds a burst of citrusy freshness. Whether you prefer a savory filling or a sweet and fruity one, these cups are sure to satisfy your taste buds.
