Add cabbage and turn with tongs until coated with fat. Stir in red-wine vinegar, water, sugar, caraway seeds, 3/4teaspoon salt, and 1/4 teaspoon pepper and braise cabbage over moderately low heat, covered, stirring occasionally, until tender, 25 to 35 minutes.
- Meanwhile, pat 2 pork chops dry and sprinkle both sides with 1/4 teaspoon salt and 1/4 teaspoon pepper (total). Heat 1 tablespoon oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown seasoned chops, turning over once, 5 minutes total, and transfer to a shallow baking pan (1 inch deep). Season remaining 2 chops and brown in oil remaining in skillet in same manner, transferring to baking pan. Roast chops in oven until thermometer inserted horizontally 2 inches into center of a chop (do not touch bone) registers 145°F, 5 to 8 minutes.
- Meanwhile, stir half of bacon into cabbage, then finely chop remaining bacon for sprinkling.
- Let chops stand in pan, loosely covered with foil, 5 minutes. Serve chops over cabbage, with any pan juices spooned over and sprinkled with bacon.

EASY SWEET AND SOUR PORK CHOPS
Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.

CLEVER CONNIE'S SWEET & SOUR PORK CHOPS
I work with developmentally-challenged adults - a few without dentures, some without the motor-skills to handle knives and forks. My extraordinarily clever supervisor came up with this recipe allowing them (and a spoon) to enjoy the taste of a good pork chop. The meat falls from the bone and shreds easily. The sauce creates a taste of China.

Steps:
- Set the oven at 250 degrees Fahrenheit.
- Trim excess fat off the pork chops.
- Add oil to frying pan and heat on high.
- Add garlic and swirl around for 30 seconds- don't let it brown or burn.
- Lower heat under frying pan. Brown the chops on both sides.
- Remove chops and place in an ovenproof baking dish in a single layer.
- Scrape the garlic and "brown bits" from the frying pan onto the top of the chops.
- Mix remaining ingredients together well and pour over the chops.
- Place chops into the oven.
- Lower heat to 200 degrees Fahrenheit.
- Leave chops in the oven for 2 hours or more.
- When the chops come from the oven - the longer the better - the meat will fall from the bones and the fat is easily removed.
- Shred the pork and return it to the "sauce".
- Leave the meat in the oven until you are ready-to-serve.
- Serve over rice.
CROCK POT SWEET AND SOUR PORK CHOPS
I found the sweet and sour recipe on betterrecipes.com and adapted it to our fasts. It was originally for Kielbasa but we discovered that this sauce can be used for hot dog topping, pork chops, chicken or anything you would like to use it with. This is our crock pot pork chop version. Let me know if anybody likes it! Sometimes, I add baby corn and a pkg. of frozen chinese style vegetables that I par-cook in the microwave in a little bit of water before I add them to the pan. You can add most anything to this basic recipe and it will still be good.

CARAWAY DUSTED PORK CHOPS WITH SWEET AND SOUR CABBAGE AND APPLES
Steps:
- Preheat oven to 450. Cook bacon until crisp, about 8 minutes. Remove bacon from pan and drain on paper towels. Meanwhile, generously season pork chops wit salt and ground caraway, coating both sides. Sear chops in bacon fat until browned on one side, 5 minutes. Place on baking sheet, seared side up and bake in oven until medium, 20 - 25 minutes. Toast caraway seeds in pan with remaining bacon fat over medium low heat, about 2 minutes. Add shallots and let sweat until softened, 4 minutes. Add cabbage and season with salt. Toss to coat with bacon fat and sweat until tender, about 30 minutes. Add apple cider vinegar and cider and cook until liquid is reduced by half, about 10 minutes. Add apples, stir, cover and cook until soft, about 2 minutes. Place 1 chop on each plate with cabbage and top with crumbled bacon.
Tips:
- Pork Chops: Choose bone-in pork chops for extra flavor and juiciness. If you prefer boneless pork chops, adjust the cooking time accordingly.
- Tenderizing: Tenderize the pork chops with a meat mallet or fork to help them cook evenly and absorb the marinade better.
- Marinade: Allow the pork chops to marinate for at least 30 minutes, or up to overnight, to infuse them with flavor.
- Breading: Dredge the pork chops in flour, then eggs, and finally breadcrumbs to create a crispy coating.
- Frying: Fry the pork chops in hot oil until golden brown and cooked through. Adjust the heat as needed to prevent burning.
- Sauce: Make the sweet and sour sauce by combining sugar, vinegar, ketchup, soy sauce, pineapple chunks, and green bell peppers. Simmer until thickened and flavorful.
- Serving: Serve the pork chops with the sweet and sour sauce poured over them. Garnish with sesame seeds and green onions for an extra touch of flavor.
Conclusion:
Sweet and sour pork chops are a delightful combination of sweet, tangy, and savory flavors.
