This was my grandmother's recipe. It was a favorite of my dad's, now is a favorite of my husband. It tastes similar to pumpkin pie, but smoother and better. If you can get over the green color this will be your favorite too.

Tips:

  • Choose the right zucchini: Use small to medium zucchinis that are firm and have smooth skin. Avoid large zucchinis as they tend to be watery and have a stronger flavor.
  • Grate the zucchini: Use a box grater or a food processor to grate the zucchini. Make sure to drain any excess water from the grated zucchini before using it in the pie.
  • Use fresh ingredients: Fresh ingredients will give your pie the best flavor. If possible, use fresh zucchini, eggs, and milk.
  • Don't overmix the batter: Overmixing the batter can make the pie tough. Mix the ingredients just until they are combined.
  • Bake the pie in a preheated oven: This will help the pie to cook evenly.
  • Let the pie cool before serving: This will allow the pie to set and make it easier to slice.
