Time 1h

Yield 4 serving(s)

Number Of Ingredients 11

1 tablespoon vegetable oil
1 1/2 lbs chicken thighs, skinless, boneless, cut into chunks
2 tablespoons sesame oil
10 slices fresh ginger
2 garlic cloves, sliced
1/2 cup dry sherry
1/3 cup soy sauce
1/4 cup water
3 tablespoons white sugar
1/2 cup basil leaves, fresh Thai
3 red chilies, dried whole

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces, and cook until lightly browned on all sides, about 5 minutes. Remove chicken from skillet and set aside.
  • Heat sesame oil in skillet, then add ginger and garlic. Cook and stir until the ginger begins to brown, about 30 seconds. Stir in the reserved chicken, sherry, soy sauce, water, and sugar. Bring to a boil, then reduce heat to medium-low, and simmer until there is only 1/4 cup of liquid left in the skillet, about 20 minutes. Stir in the basil and chiles, and increase heat to medium; continue cooking until the liquid is almost gone.

Tips:

  • Choose the Right Chicken: Use a whole chicken cut into 8 pieces, or use chicken thighs or drumsticks. Bone-in, skin-on chicken is best for maximum flavor.
  • Prepare Ingredients in Advance: Cut the chicken, slice the ginger, and chop the garlic and basil leaves before starting to cook. This will save time and ensure that all the ingredients are ready when you need them.
  • Use a Well-Seasoned Wok: A well-seasoned wok helps to prevent sticking and imparts a nice flavor to the chicken. If you don't have a wok, you can use a large skillet or Dutch oven.
  • Don't Overcrowd the Wok: Cook the chicken in batches if necessary to avoid overcrowding the wok. Overcrowding will prevent the chicken from cooking evenly and will result in soggy chicken.
  • Use High Heat: Use high heat to sear the chicken and caramelize the sugar. This will give the chicken a nice brown color and will help to develop the flavor.
  • Don't Stir Too Much: Stir the chicken occasionally to prevent it from sticking, but don't stir too much or the chicken will end up shredded.
  • Add the Sauce Ingredients at the Right Time: Add the soy sauce, rice wine, and sesame oil at the end of the cooking process to prevent them from burning.
  • Garnish with Fresh Basil: Garnish the chicken with fresh basil leaves before serving for a pop of color and flavor.

Conclusion:

Three-Cup Chicken is a delicious and easy-to-make Taiwanese dish that is perfect for a weeknight meal. The combination of soy sauce, rice wine, and sesame oil creates a flavorful sauce that pairs perfectly with the tender chicken. Serve Three-Cup Chicken with steamed rice or noodles for a complete meal.
