1 lb grouper fillets or 1 lb red snapper
1 1/2 cups corn flakes
1 cup macadamia nuts (or pecans or walnuts)
2 tablespoons chopped parsley (optional)
salt and pepper
cooking spray, for baking pan
1/3 cup honey
1/3 cup soy sauce
2 teaspoons dry mustard (or more)

Steps:

  • Heat oven to 350 degrees.
  • In a food processor, pulse nuts until coarsely chopped.
  • Add cornflakes and pulse both together until flakes are in small pieces but not broken down.
  • Add chopped parsley, salt and white pepper to the mixture and spread on a platter.
  • Roll the fish fillets in the cornflake breading and press it on the fish with your fingers to make it stick.
  • Spray the baking pan, lay the fish fillets inches.
  • Bake for 10 minutes.
  • The fish should still be moist and delicate- not overcooked or dry.
  • While the fish is baking, mix the honey, soy sauce, and dry mustard until thoroughly integrated.
  • Place the mahi mahi on a dinner plate with rice.

5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Steps:

  • Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
  • Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.

1 egg

2 tablespoons brown sugar
2 tablespoons reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot

Steps:

  • Place the bread crumbs, nuts, salt and pepper in a food processor; cover and pulse until nuts are finely chopped., In a shallow bowl, whisk egg and water. Place flour and nut mixture in separate shallow bowls. 2 ounces macadamia nuts
4 ounces plain bread crumbs
6 (6 ounce) mahi mahi fillets
4 ounces butter
2 ounces shallots, diced
4 cups chicken stock
4 ounces pineapple, rough chopped
4 ounces papaya, rough chopped
4 ounces mango, rough chopped
1 tablespoon shredded coconut
2 habanero peppers, seeded
salt and pepper to taste
white sugar to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a food processor or blender, pulse together macadamia nuts and breadcrumbs until finely ground. Pour nut mixture onto a plate, and coat fish fillets on both sides.
  • Heat butter in a large skillet over medium heat. Fry fillets on both sides until nuts are golden brown. Remove to a baking pan.
  • Add shallots to skillet, and cook until translucent. Stir in chicken stock. Mix in pineapple, papaya, mango, coconut, and habanero peppers. Season with salt, pepper, and sugar to taste. 1/2 cup peeled and diced papaya
1/2 cup peeled and diced mango
1 orange, cut into wedges
1/2 cup diced fresh pineapple
1 tablespoon Grand Marnier
1/2 cup cider vinegar
1/4 cup brown sugar
1/2 cup orange juice, plus
2 tablespoons orange juice
1 1/2 tablespoons cornstarch
3 cups hawaiian macadamia nuts, ground
3 garlic cloves, chopped
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh cilantro
4 (8 ounce) grouper fillets
salt & freshly ground black pepper, to taste
4 lemon wedges
1/4 cup flour
2 eggs, beaten
vegetable oil, for frying

Steps:

  • Combine fruits and Grand Marnier; let macerate 30 minutes to 1 hour.
  • Mix vinegar, brown sugar and 1/2 cup orange juice in a nonreactive saucepan. Cook over medium heat until sugar melts. Add fruit and heat through. Dissolve cornstarch in remaining orange juice and stir into sauce. Heat, stirring, until boiling and thickened. Keep warm.

  • Heat about 1/8-inch oil in a skillet over medium-high heat. Add the fish fillets, do not crowd, this may have to be done in batches. Cook about 3 minutes until golden. Turn once and cook through. Be careful to regulate temperature as nut coating will burn easily. Serve with fruit sauce.
