TANDOORI CHICKEN NAAN BREAD WITH YOGURT SAUCE

Categories     Chicken     Salad     Summer     Dinner     Grill/Barbecue     Healthy

Number Of Ingredients 22

1 pound chicken thighs
4 pieces Naan Bread
1 piece sliced cucumber
1 piece sliced tomato
1 piece sliced red onion
1 head shredded romaine Lettuce
1/2 cup yogurt or sour cream
1/2 teaspoon fresh ginger
2 cloves minced garlic
1 teaspoon ground corriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 pinch cayenne pepper
1 piece lime zest
1 tablespoon lime juice
2 teaspoons sugar
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon pepper
6 ounces yogurt or sour cream
1 tablespoon chopped mint
1 teaspoon cumin

Steps:

  • In a small bowl, whisk together the marinade ingredients together. Add the chicken to a zip-top bag. Pour in the marinade mixture and massage the chicken until coated well. Place the chicken in the refrigerator. Marinate at least 1 hour or overnight.
  • When firing up the grill, remember tandoori is cooked at very high temperatures, but your barbecue grill will suffice. Start with a high temperature and keep it up during the cooking only lifting the lid to place the meat on the grill and turn it over.
  • Preheat the grill and set up for both direct and indirect grilling, by placing coals to one side of the grill. When the coals are ready, brush the rack with oil to prevent the chicken from sticking. Place the chicken thighs directly over coals for about 3 to 4 minutes each side until seared, then move to the other side of the grill. Turn chicken, as needed to keep from burning and to get grill marks until chicken is cooked through and tender, until done (about 20 to 30 minutes total). Add squeezes of fresh lime juice between turns. When the chicken is done, remove from the grill and allow it to rest.
  • While the grill is still hot, place the Naan bread on the grate directly over the coals for about 1 to 2 minutes on each side.
  • Top the Naan bread with 3 to 4 chicken tenders, sliced cucumbers, red onion, tomato, chopped cilantro and a squeeze of fresh lime juice. Top with the yogurt sauce and enjoy!

Yield Serves 6

Number Of Ingredients 18

Sandwiches
6 skinless boneless chicken breast halves
2 tablespoons fresh lemon juice
1 cup plain yogurt
2 tablespoons chopped fresh ginger
2 garlic cloves, chopped
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/4 teaspoon turmeric
12 slices sourdough bread
Indian mayonnaise
1 cup packed fresh mint leaves
1 cup packed fresh cilantro leaves
1 jalapeño chili, seeded, minced
3 tablespoons chopped onion
2 teaspoons cider vinegar
1/2 cup mayonnaise

Steps:

  • For Sandwiches:
  • Arrange boneless chicken breasts in single layer in large glass baking dish. Sprinkle with fresh lemon juice: season with salt. Mix plain yogurt, chopped fresh ginger, chopped garlic, ground cumin, ground coriander, cayenne pepper and turmeric in medium bowl. Pour yogurt marinade over chicken breasts and turn to coat. Cover chicken and refrigerate 3 to 8 hours.
  • Prepare barbecue (medium-high heat) or preheat broiler. Remove chicken breasts from marinade (do not wipe clean). Grill or broil chicken until just cooked through, about 5 minutes per side. Cool slightly. (Chicken can be prepared up to 2 hours ahead. Cover and let stand at room temperature.)
  • Lightly toast (or grill) sourdough bread. Spread 1 side of each piece of bread generously with Indian Spiced Mayonnaise. Slice chicken breasts diagonally. Place slices of 1 breast atop each of 6 sourdough bread slices. Top with remaining bread slices. Cut chicken sandwiches in half. Serve sandwiches warm or at room temperature.
  • For Mayonnaise:
  • Combine 1 cup mint leaves, 1 cup cilantro leaves, minced jalapeño chili and chopped onion in work bowl of processor. Process until very finely chopped. Mix in cider vinegar. Add mayonnaise and process just until combined. Season mayonnaise to taste with salt and pepper. (Mayonnaise can be prepared 3 days ahead. Cover tightly and refrigerate.) Makes about 1 scant cup.

Tips

  • Use a variety of vegetables. Don't just stick to the traditional onion, bell pepper, and tomato combination. Try adding other vegetables like zucchini, carrots, or mushrooms. You can also add fresh herbs like cilantro, basil, or oregano for extra flavor.
  • Don't overcrowd the pan. When cooking the vegetables, make sure not to overcrowd the pan. This will prevent them from cooking evenly and becoming soggy.
  • Cook the chicken thoroughly. Make sure the chicken is cooked all the way through before serving. You can check this by inserting a meat thermometer into the thickest part of the chicken. The internal temperature should read 165 degrees Fahrenheit.
  • Use fresh ingredients. Whenever possible, use fresh ingredients for the best flavor. This includes using fresh vegetables, herbs, and spices.
  • Experiment with different flavors. Don't be afraid to experiment with different flavors when making tandoori chicken and naan bread. There are many different ways to make these dishes, so find what you like best.

Conclusion

Tandoori chicken and naan bread are delicious and easy-to-make dishes that are perfect for any occasion. With a little planning and preparation, you can make these dishes at home in no time. So next time you're looking for a new and exciting meal to try, give tandoori chicken and naan bread a try. You won't be disappointed.
