TENDER TOMATO CHICKEN BREASTS
This is a light, juicy, flavorful dish. Being a mom of a 7 month old, I've learned to take a lot of shortcuts and still be able to cook quality food. This is quick, easy, and tasty. If you absolutely must use fresh veggies, that's ok, but frozen veggies, in my opinion, work a little bit better. Serve with rice, if desired. To kick it up a bit, add chopped green peppers in with the tomatoes.

Steps:
- Heat the oil in a skillet over medium heat. Season chicken breasts on both sides with pepper and onion powder, and arrange in the skillet. Cook 2 minutes on each side, just until browned. Pour tomatoes and reserved liquid over the chicken. Pour in broth. Cover skillet, and continue cooking 15 minutes on each side, until chicken juices run clear.
- While the chicken is cooking, place the frozen mixed vegetables and water in a pot. Scoop about 3/4 cup liquid from the skillet, and mix into the pot. Bring to a boil, and cook 5 minutes, or until vegetables are tender; drain. Arrange chicken breasts over the vegetables, and drizzle with liquid from the skillet to serve.

TOMATO-TOPPED CHICKEN
Tomato slices and basil give garden-fresh flavor to this moist, tender chicken from Ruth Andrewson of Leavenworth, Washington. "I keep a resealable bag of individually frozen chicken breasts in my freezer, so it's easy to take out just two for this recipe," she notes.

Tips:
- Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful the sauce will be. If you don't have ripe tomatoes, you can roast them in the oven to concentrate their flavor.
- Season the chicken well: Don't be afraid to season the chicken generously with salt and pepper. This will help to bring out the flavor of the chicken and prevent it from tasting bland.
- Cook the chicken until it is cooked through: Use a meat thermometer to ensure that the chicken is cooked to an internal temperature of 165 degrees Fahrenheit. This will help to prevent the chicken from being dry or undercooked.
- Let the chicken rest before serving: Letting the chicken rest for a few minutes before serving will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful chicken.
- Serve the chicken with your favorite sides: Tender tomato chicken breasts can be served with a variety of sides, such as mashed potatoes, rice, roasted vegetables, or a salad.
Conclusion:
Tender tomato chicken breasts is a simple but delicious dish that is perfect for a weeknight meal. The chicken is cooked in a flavorful tomato sauce, and it is so tender that it falls apart easily. This dish is sure to be a hit with your family and friends.
