7 ounces firm tofu, cut into cubes
2 ounces almonds
1 ounce pumpkin seeds
2 tablespoons ground flaxseed
1 tablespoon low-sodium soy sauce
1 tablespoon toasted sesame oil
2 cloves garlic, chopped
One 1-inch piece peeled fresh ginger, chopped
4 sundried tomatoes
2 ounces sesame seeds
2 tablespoons finely grated fresh ginger
1 tablespoon toasted sesame oil
2 cloves garlic, finely minced
3 tablespoons low-sodium soy sauce
1 tablespoon mirin
1 tablespoon light brown sugar
1 teaspoon rice vinegar
1 teaspoon cornstarch mixed with 1 tablespoon water
2 tablespoons finely chopped cilantro
1 scallion, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sesame tofu bites: In a food processor, add the tofu, almonds, pumpkin seeds, ground flaxseed, soy sauce, sesame oil, garlic, ginger and sundried tomatoes. Pulse until the mixture comes together, but still has some texture, 8 or 9 pulses. Be careful not to over process.
  • Roll the mixture into 1-teaspoon balls using clean hands.
  • On a small plate, roll each ball in the sesame seeds to coat and then place on a baking sheet.
  • Bake for 15 to 20 minutes until golden brown.
  • For the teriyaki sauce: Place the finely grated ginger, sesame oil and garlic in a small saucepan and warm through over a low heat for about 1 minute. Then add the soy sauce, mirin, brown sugar and rice vinegar. When the sugar has dissolved, pour in the cornstarch slurry and continue to stir over low heat for a couple of minutes until thickened and glossy.
  • When the tofu balls are cooked, remove them from the oven. Pour the sauce onto a serving platter.
  • Arrange the sesame tofu bites on top of the teriyaki sauce.
  • Sprinkle over the cilantro and scallions.
  • Serve with cocktail sticks on the side.

1 (16 ounce) package extra-firm tofu, drained and cubed

½ cup teriyaki sauce
½ cup brown sugar
1 stalk green onion, chopped
1 teaspoon sesame seeds, or to taste

Steps:

  • Bring a large pot of water to a boil. Add lo mein noodles and cook, stirring occasionally, until tender yet firm to the bite, about 6 minutes. Drain well.

17 ounces fresh firm tofu, cut into 4 pieces (1 lb, 1 ounce)
4 fresh shiitake mushrooms
7 1/4 ounces dried egg noodles
4 1/2 fluid ounces dark soy sauce
4 1/2 fluid ounces mirin (Japanese sweet rice wine)
4 1/2 fluid ounces sake
1 tablespoon sugar
2 tablespoons sunflower oil
2 garlic cloves, finely sliced
7 1/4 ounces broccoli florets
1 leek, white and light green parts finely sliced
7 1/4 ounces pak choi, quartered lengthways
1 fennel bulb, trimmed and finely sliced
2 teaspoons cornflour, mixed with
4 tablespoons cold water
2 spring onions, finely sliced diagonally
1 tablespoon toasted sesame seeds, pan-toasted

Steps:

  • To make the marinade, put the soy sauce, mirin, sake and sugar in a large frying pan and heat, stirring until the sugar has dissolved.
  • Add the tofu and mushrooms, if using. Simmer gently for about 15 minutes, turning the tofu over halfway through cooking.
  • Transfer the tofu steaks to a lightly oiled baking dish or roasting tin.
  • Spoon a little sauce on top and roast in a preheated oven at 220C/425F/Gas 7 for 10 minutes. Keep them warm.
  • Using a slotted spoon, remove the mushrooms from the remaining sauce, squeeze dry and slice finely. Reserve the sauce.
  • To make the glazed vegetables, heat a wok until hot, then add the oil. Add the garlic, broccoli, leek and sliced mushrooms and stir fry for two minutes.
  • Add the pak choi and the fennel. Stir fry for two minutes.
  • Add the reserved sauce and 2½fl oz water, stir, cover and cook for two minutes.
  • Push the vegetables to the back of the wok, add the cornflour mixture to the bubbling juices and stir until thickened.
  • Mix the vegetables into the sauce.
  • Cook the noodles according to the packet instructions, then drain.
  • To serve, put a nest of noodles on warmed plates and pile on the vegetables.
  • Turn the tofu steaks over and put shiny side up on top of the vegetables.
  • Sprinkle with spring onions and toasted sesame seeds and serve.

14 oz extra firm tofu, 1 block
1 carrot, sliced
1 red pepper, chopped
½ broccoli
½ cup soy sauce
⅓ cup honey
2 teaspoons sesame seed
1 teaspoon sesame oil
4 slices ginger, minced or sliced
3 cloves garlic, minced
1 sprig fresh scallion, chopped

Steps:

  • Preheat oven to 450°F (230˚C).
  • Place two sheets of paper towels on a cutting board and put tofu on top, then put two sheets of paper towels on top of the tofu.
