1 medium zucchini
2 scallions, finely chopped
1 pound ground turkey (94% lean)
1 large egg, beaten
1 teaspoon chili powder
½ teaspoon Kosher salt
2 tablespoons canola oil
4 slices Monterey jack cheese
4 burger buns, split and toasted
1 cup chunky salsa

Steps:

  • 1. Place a box grater on 2 sheets of paper towels. Grate the zucchini on the large holes of the grater. Roll in the paper towels to squeeze out as much liquid as possible. Transfer to a large bowl and mix in the scallions, turkey, egg, chili powder, and salt until well combined. Form into 4 burger patties the same diameter as your buns.
  • 2. Heat the oil in a large skillet over medium heat. Add the burgers and cook until browned on the bottoms, about 7 minutes. Carefully flip and cook until cooked through, about 8 minutes. Place a slice of cheese on top of each burger, then transfer to the bottom buns. Top with the salsa and the top burger buns.
  • 3. Once the stovetop is cool, wipe up any oil splatters or meat juices that may have spilled on the counter with Clorox® Disinfecting Wipes*. Rinse hands once complete.

1 red onion , finely chopped
1 tsp cayenne pepper
1 tsp dried oregano
4 rolls , toasted
4 slices Monterey Jack cheese
4 tbsp chopped fresh tomato

  • Mix mince with the onion, cayenne pepper and oregano. Season well, shape into 4 patties and chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Cook burgers for 15 mins or until done to your liking, flipping over halfway through.

1 lb ground chuck
1 jalapeno pepper, seeded and finely chopped
salt and pepper
4 soft corn tortillas
1 ripe avocado, pitted and sliced
1/2 cup shredded sharp cheddar cheese
12 plum tomatoes, seeded and diced
1/2 cup cilantro, chopped
1/2 cup vidalia sweet onion, chopped
1 tablespoon jalapeno pepper, seeded and chopped
1/4 cup fresh lime juice
salt and pepper

Steps:

  • Burgers:.
  • Preheat broiler or grill to medium high.
  • Using wooden spoon, mix together the ground beef, jalapeno, 1/4 cup of the salsa and salt and pepper in large bowl until the ingredients are well combined.
  • Form into 4 patties.
  • Broil or grill, flipping once until cooked through, about 4-5 minutes each side.
  • Place tortillas in microwave,and cook on high for about 20 seconds.
  • Arrange burger on warm totilla and top with avacodo slices, shredded cheese and salsa.
  • Wrap like burrito.

  • Can be used immediately if using for the burgers, if using as dip, let sit in fridge for at least 1 hour.

1/2 cup chopped onion

1 1/4 lbs 95% lean ground turkey or 1 1/4 lbs ground beef
1 1/2 tablespoons taco seasoning mix
3/4 cup shredded reduced-fat monterey jack cheese (or nonfat cheese) or 3/4 cup Mexican blend cheese (or nonfat cheese)
6 light hamburger buns or 6 multi-grain hamburger buns
1/4 cup salsa (or mix half and half) or 1/4 cup ketchup, plus (or mix half and half)
2 tablespoons salsa (or mix half and half) or 2 tablespoons ketchup (or mix half and half)
6 slices red onions or 6 slices sweet white onions
6 slices tomatoes
6 lettuce leaves

Steps:

  • Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.
  • Place the vegetables, ground meat, and taco seasoning mix in a medium-sized bowl and mix thoroughly.

On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.

Your mouth will explode with the flavours of spicy-hot Tex-Mex cuisine, tempered with a guacamole dressing. Members of the Kitchen Tourists suggested ingredients suitable for this delectable treat and so: Ed&Theresa - avocado; Muffin Goddess - lime; MA HIKER - hot sauce; fluffernutter - chipotle in adobo; Melody Ashcraft - tomato; Mandy from Oz - scallions; Laffer - cilantro; ms.susan - chili powder; TansGram - monterey jack cheese; and I provided the pickled jalapeno rings as per Recipe #170474. 1 tablespoon mayonnaise
3 teaspoons fresh lime juice (or 2 tsps fresh lemon juice)
1 dash hot sauce (not too much, more heat will come with the minced chipotle)

1/4 cup thinly sliced scallion

Steps:

  • Halve, pit and peel avocado.
  • Mash ¼ of avocado with a fork; add mayonnaise, lemon juice, hot sauce and salt to taste; mash with back of fork until smooth.
  • Stir in tomato, chipotle, scallion, cilantro, and remaining avocado, cut into ¼ inch cubes and fold together gently but thoroughly. Cover surface with plastic wrap and refrigerate until ready to use.
  • Mix chili powder, cumin, oregano and salt into beef. Handling beef as little as possible, divide it into quarters; shape each quarter into a patty.
  • Heat a well-seasoned, ridged, cast-iron pan over moderately-high heat (or grill on bbq) until hot and cook the hamburgers 5 ½ minutes per side for rare.
  • Top with cheese slices and cook, covered, for 1 minute, to melt cheese.
  • Transfer to a plate and let stand, tented loosely with foil, for 3 minutes, to finish cooking.

3 medium zucchini or yellow squash, halved lengthwise and thinly sliced crosswise

1 1/2 pounds ground turkey (93 percent lean)
2 teaspoons chili powder
4 ounces pepper Jack cheese, thinly sliced
4 thick slices country bread, halved
1 avocado, halved, pitted, peeled, and thinly sliced
Store-bought salsa, for topping (optional)

Steps:

  • Heat grill to medium-high; lightly oil grates. In a medium bowl, combine zucchini, onion, lime juice, and oil; season with salt and pepper. Let zucchini salad marinate at room temperature, 15 minutes (or refrigerate, up to 1 day).
