½ stick unsalted butter
3 tablespoons olive oil, divided, plus 4 teaspoons
1 large sprig fresh rosemary, leaves minced
2 large sprigs fresh thyme, leaves minced
3 cloves garlic, smashed
½ teaspoon freshly ground black pepper
7 oz feta cheese, drained
½ cup crème fraîche
2 tablespoons olive oil, plus more for garnish
1 tablespoon lemon zest, plus more for garnish
2 teaspoons lemon juice
¼ teaspoon kosher salt
