1 1/2 pounds boneless, skinless chicken thighs (about 5), cut into 1/2-inch-wide strips
Coarse salt and freshly ground pepper
1 tablespoon peanut or safflower oil
2 tablespoons minced garlic
1 tablespoon minced peeled fresh ginger
2 teaspoons fish sauce
1 cup well-shaken coconut milk
1 1/2 cups chopped fresh pineapple, divided
1/3 cup chopped scallions
1 Thai chile, thinly sliced crosswise
2 cups cooked rice (preferably sticky), for serving

Steps:

2 bananas, peeled and thinly sliced
2 cucumbers - peeled, seeded, and diced
½ cup fresh mint leaves

1 tablespoon fish sauce

8 tomatoes
1/2 sweet onion
1/4 c chopped fresh cilantro
1/2 c thai garlic chile sauce
1 tsp granulated garlic

  • 1. Cut tomatoes in half, quarter onion half. Lay on baking sheet and place in 300° oven for 30 min. Allow to cool, then place tomatoes and onion in food processor and puree.
