2 eggs, beaten
3 tablespoons chicken broth or stock
3 tablespoons fish sauce
2 teaspoons curry powder
1 teaspoon sugar
½ cup roasted unsalted cashews
4 cups cooked rice ((preferably at least 1 day old))

1 teaspoon anchovy paste
1/2 teaspoon turmeric
2 tablespoons vegetable oil
1 pound small shrimp (about 50), shelled and deveined
2 garlic cloves, minced

  • Halve the pineapple lengthwise, cut out the flesh, leaving 1/2-inch-thick shells, and reserve the shells.
