Steps:
- Combine tomatoes, onions, vinegar, tomato paste, green bell peppers, red bell peppers, banana peppers, sugar, garlic, pickling salt, and black pepper in a large stockpot; bring to a boil, reduce heat to medium-low, and simmer for 30 minutes. Mix cilantro into salsa.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack salsa into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 35 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Steps:
- Prep the tomatoes. If you are using tomatoes that have seeds then you will want to remove them. If you are using cherry tomatoes then you do not need to remove the seeds. To clean tomatoes all you need to do is slice each one in half, lengthwise, trim off the end and scrape the seeds out with a spoon. Then simply slice them.
- Blend the salsa. Add the chopped tomatoes, red onion, green chilies, cilantro, garlic, honey, salt and pepper to the bowl of a food processor or high speed blender and blend on high until desired consistency is achieved. I like my salsa chunky so I blended it for about 15 seconds.
- Serve. Pour the salsa into a bowl and serve it with your favorite tortilla chips.

Tips for Making the Best Fresh Tomato Salsa:
- Use ripe, flavorful tomatoes: The quality of your tomatoes will make a big difference in the flavor of your salsa. Look for tomatoes that are deep red, plump, and have no blemishes.
- Dice the tomatoes into small pieces: This will help the salsa to have a more consistent texture.
- Don't over-seed the tomatoes: Removing the seeds will help to prevent the salsa from being too watery.
- Use fresh herbs and spices: Cilantro, garlic, and onion are classic salsa ingredients, but you can also experiment with other herbs and spices, such as basil, oregano, cumin, or chili powder.
- Add some acidity: A little bit of lime juice or vinegar will help to brighten the flavor of the salsa.
- Chill the salsa before serving: This will help to develop the flavors and make the salsa more refreshing.
Conclusion:
Fresh tomato salsa is a delicious, versatile condiment that can be used to add flavor to a variety of dishes. It's easy to make and can be tailored to your own personal taste preferences.
