Yield 24 cookies

Number Of Ingredients 5

1 C. Adams Peanut Butter (No sugar added, all natural)
1 Egg
1 C. Splenda Brown Sugar
1 tsp. vanilla
1 tsp. baking soda

Steps:

  • Pre-heat oven to 350 degrees. Prepare a cookie sheet with a ligt coating of cooking spray such as Pam. In mixing bowl, combine egg, brown sugar, vanilla and baking soda until blended. Add Peanut butter and combine. Dough should be very thick and easily dropped by teaspooful onto cookie sheet. Bake at 350 degrees for 8-10 minutes. Remove from oven and allow to cool for 5 minutes before removing to tray. Enjoy!

Tips:

  • Use almond flour and coconut flour instead of all-purpose flour: Almond flour and coconut flour are low-carb and high-fiber flours that can help to keep blood sugar levels stable. They also add a delicious nutty flavor to the cookies.
  • Use a natural sweetener like stevia or erythritol instead of sugar: Stevia and erythritol are natural sweeteners that have no calories or carbs. They can be used to sweeten the cookies without raising blood sugar levels.
  • Add some healthy fats like butter or coconut oil: Healthy fats can help to slow down the absorption of sugar into the bloodstream. They also add a rich flavor and texture to the cookies.
  • Don't overbake the cookies: Overbaked cookies are dry and crumbly. Underbaked cookies are soft and chewy. The perfect cookie is somewhere in between. Bake the cookies until the edges are just starting to brown and the centers are still slightly soft.

Conclusion:

These peanut butter cookies are a delicious and satisfying treat that can be enjoyed by people with diabetes. They are made with wholesome ingredients that are low in carbs and high in fiber. They are also sweetened with natural sweeteners that have no calories or carbs. These cookies are a great way to satisfy your sweet tooth without sacrificing your health.
