One 12-ounce/12-count package Hawaiian bread rolls
1 cup thinly sliced iceberg lettuce
1 teaspoon olive oil
1/2 teaspoon red wine vinegar
6 ounces sliced salami
6 ounces soppressata
6 ounces prosciutto
6 ounces sliced mortadella
6 ounces thin deli-sliced roast beef
6 ounces provolone, sliced
6 ounces mozzarella, sliced

Steps:

  • For the spicy olive spread: Mix together the pimientos, olives, mayonnaise, peppers, vinegar, oregano, green onions, salt and pepper in a bowl until well combined. Set aside.
  • For the sandwiches: Without separating the rolls, slice the entire top off the set of Hawaiian rolls. Place the bottoms on a baking sheet.
  • Lightly dress the iceberg in the olive oil and vinegar, then set aside.

1/3 cup olive oil
10 large pitted green olives, chopped

Salt and freshly ground black pepper
1 (1-pound) round bread loaf (about 7 inches in diameter and 3 inches high)
4 ounces thinly sliced ham
4 ounces thinly sliced mortadella
4 ounces thinly sliced salami
4 ounces sliced provolone
1/2 red onion, thinly sliced
1 1/2 ounces arugula leaves

  • Whisk the first 3 ingredients in a large bowl to blend. Gradually blend in the oil. Stir in the olives and roasted peppers. Season the vinaigrette, to taste, with salt and pepper.
  • Cut the top 1-inch of the bread loaf. Set the top aside. Hollow out the bottom and top halves of the bread. 1 cup pitted green olives
½ cup fresh basil leaves
1 tablespoon finely chopped garlic
¼ cup olive oil
1 (1 pound) loaf Italian bread
½ pound thinly sliced Genoa salami
½ pound thinly sliced provolone cheese
3 tomatoes, sliced
1 large red onion, thinly sliced

Steps:

  • Combine the kalamata olives, green olives, basil, garlic and oil in a food processor or blender and process until coarsely chopped.
  • Cut the top from the bread loaf and hollow out the center so that about 1/2 inch of crust remains. Spread olive mixture evenly over the inside of the loaf. Layer the salami, cheese, tomatoes and onion until the loaf is full.

A genuine muffuletta should be made on oven-fresh Italian bread topped with sesame seeds. Be sure and use the highest-quality ingredients available; it really makes a difference! Since you're going to all the trouble of making the olive salad, consider doubling the recipe so you'll have some extra waiting around for when you get another muffuletta craving -- it keeps for at least a month! 32 ounces frozen bread dough, thawed (2 loaves)
20 ounces frozen chopped spinach, thawed and well drained
1 (14 ounce) jar artichoke hearts, drained and chopped
1 (12 ounce) jar marinated roasted red peppers, drained (strips)
6 ounces pitted ripe olives, drained
1 lb fresh mushrooms, sliced
8 ounces salami, thinly sliced
8 ounces provolone cheese, thinly sliced
8 ounces cooked ham, thinly sliced
1 egg (plus 1 tbsp water to make an eggwash)

Steps:

  • Cut 1 bread loaf in half crosswise. Roll onto a lightly-floured surface into a 10-inch circle. Cover, and set aside.
  • Press together remaining 1 and 1/2 dough loaves, and roll out onto a lightly floured surface into a 12- inch circle. Fit dough into a 9" springform pan, allowing edges to overhang.
  • Press spinach and red pepper strips between layers of paper towels, and set aside.
  • In a nonstick sauté pan with a bit of oil, saute mushrooms for about 8 minutes; drain.
  • Layer half of salami, mushrooms, and olives in dough-lined pan; top with half of cheese slices.
  • Layer with half of the ham, spinach, pepper strips, remaining salami, remaining ham, and then artichokes. Top with remaining cheese slices.
  • Stir together egg and water. Brush on overhanging pastry edges.
  • Top torte with remaining pastry round. Fold overhanging edges over top pastry, crimping as necessary, and press to seal. Brush top with remaining egg mixture.
  • Bake at 350 on bottom oven rack 30 minutes. Remove from oven, and cover with aluminum foil, if necessary, to prevent excessive browning.
  • Bake 15 to 20 more minutes. Cool in pan on a wire rack. Remove sides of pan, and cut into wedges.

This recipe originally came from "Dude Food: Recipes for the Modern Guy" it is inspired by the mile high sandwich put together by Dagwood in the comic strip Blondie. This is one of my favorite recipes, it's very BIG, tasty, and filling. The sweet figs contrast well with the rest of the sandwich. I have modified it a bit, I used cream cheese in place of brie, an italian loaf in place of a long crusty roll, and I added the olive oil and oregeno. 1 loaf Italian bread
8 dried figs
4 ounces cream cheese
1/2 lb sliced ham
1/2 lb sliced deli turkey
4 slices cheddar cheese
4 slices monterey jack cheese
olive oil

  • Preheat oven to 350 degrees F.
  • Butter bread and lightly toast.
  • Thinly slice the figs removing stems.
  • Cut loaf horizontally down the middle.

  • Cut vertically into 4-5 slices and serve.
  • Best served fresh while the bread is still warm from the toasting, but if you refrigerate and eat later, microwaving quickly (about 10-15 seconds) seems to do the trick.
