8 (2-ounce) veal cutlets (pounded flat)
1 cup veal stock (or chicken stock)
1/2 cup dry sherry
Juice of 1/2 lemon, more to taste
2 tablespoons capers
2 tablespoons butter
2 tablespoons Italian parsley (finely chopped)
Garnish: lemon slices

Steps:

  • Gather the ingredients.

½ pound veal (cut in thin slices)
4 tbsp flour ((see notes))
8 slices lemon ((see notes))
2 sprigs thyme
4 tbsp butter
2 tbsp cappers
2 tbsp lemon (juice)
2 tbsp white wine (dry)
1 pinch salt
1 pinch pepper (crushed)

Steps:

  • First, gather all your ingredients.

4 boneless veal steaks, pounded thin
salt and pepper
1/2 cup flour
1/4 butter
2 lemons
2 teaspoons milk

Steps:

  • Salt and pepper the steaks.
  • Heat butter in 12in. skillet on med. heat
  • Roll the steaks in flour and brown on both sides turning occ.
