8 ounces sliced mixed mushrooms (about 4 cups)
4 stalks celery, sliced
1 bunch scallions, sliced
Kosher salt and freshly ground pepper
4 6-ounce tilapia fillets

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
  • Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.

6 (5- to 6-oz) pieces skinless tilapia fillet or farm-raised striped bass fillets with skin

  • Stir together butter, shallot, zest, lime juice, chile, and salt in a bowl.
  • Prepare fish:

I usually put lemon on my fish, but we were out, so I used lime juice instead. Everyone really liked it, so I make it all the time now. Even my very picky husband requests it! It's easy to adjust this recipe to feed more or less people.

8 tilapia fillets (4-6 oz each)
4 tablespoons butter (do not substitute with margarine)
1 tablespoon garlic powder
1/4 cup lime juice

approx. 1/2 tsp old bay seasoning salt to taste. Lime herb butter: 1 stick unsalted butter softened
1/4 tsp salt
1/2 Tbsp chopped chives 1/2 Tbsp chopped parsley
juice and pulp from 1 sm. lime. lime zest optional.

  • lightly salt tilapia on both sides. sprinkle top side of fish evenly with old bay, set aside. In sm. bowl mix butter, salt, herbs the lime juice and pulp. using a rubber spatula works well for this. when thourly mixed take about 1 tsp of butter mixture and place on each filet. there will be about 1/2 of butter mixture left, you can save for a later use. spread butter out evenly on each filet. bake in a 400 degree oven for about 10 min. or until fish is opaque in the thickest part. Just before serving sprinkle each filet with lime zest if desired.
