- lightly salt tilapia on both sides. sprinkle top side of fish evenly with old bay, set aside. In sm. bowl mix butter, salt, herbs the lime juice and pulp. using a rubber spatula works well for this. when thourly mixed take about 1 tsp of butter mixture and place on each filet. there will be about 1/2 of butter mixture left, you can save for a later use. spread butter out evenly on each filet. bake in a 400 degree oven for about 10 min. or until fish is opaque in the thickest part. Just before serving sprinkle each filet with lime zest if desired.
