SUGAR & SPICE ROASTED PUMPKIN SEEDS

Sugar & Spice Roasted Pumpkin Seeds image

I found the basis for this recipe on All Recipes.com, posted there by Jani. I liked the idea but felt it needed some changes to fit my family's taste. It's a sweet, pumpkin pie spiced flavor with a hint of salt that we really enjoyed. I'm posting my version here for safe keeping because we all want to make this again next year.

Time 1h

Yield 2 cups, 6 serving(s)

Number Of Ingredients 5

2 cups raw pumpkin seeds
5 tablespoons sugar (divided)
1/2 teaspoon sea salt (iodized table salt is fine, I just avoid it due to thyroid disease)
1 teaspoon pumpkin pie spice
3 tablespoons butter

Steps:

  • Preheat oven to 250 degrees F.
  • On foil lined cookie sheet (I fold up all four sides of foil to form a lip so they don't slide off), spread out seeds in a single layer.
  • Toast in oven for 45-50 minutes, stirring several times until seeds are dry & starting to brown.
  • When seeds are toasted, melt butter in a large skillet over med-high heat.
  • Add seeds & 2 Tablespoons of the sugar. Stir until sugar is melted. About 1 minute.
  • In medium sized mixing bowl, stir together the remaining 3 Tablespoons of sugar with the salt & pumpkin pie spice.
  • Add pumpkin seeds from skillet to mixing bowl & stir until coated.

Tips:

  • Choose the right pumpkin: For the best results, use a sugar pumpkin or a pie pumpkin. These pumpkins have a sweet flavor and a dense texture that holds up well when toasted.
  • Clean the pumpkin seeds thoroughly: Remove all the pulp and strings from the pumpkin seeds. Rinse them well under cold water and pat them dry with a paper towel.
  • Season the pumpkin seeds with your favorite spices: There are many different ways to season pumpkin seeds. Some popular options include cinnamon, nutmeg, ginger, and cloves. You can also add a little bit of salt and pepper for a savory flavor.
  • Toast the pumpkin seeds in a single layer: This will help them to cook evenly. If you overcrowd the pan, the pumpkin seeds will steam instead of toast.
  • Keep an eye on the pumpkin seeds while they are toasting: They can burn quickly, so it is important to stir them frequently.

Conclusion:

Toasted pumpkin seeds are a delicious and healthy snack that is perfect for fall. They are easy to make and can be seasoned with a variety of spices to suit your taste. Whether you enjoy them plain or coated in a sweet or savory glaze, toasted pumpkin seeds are a surefire hit.
