2 tablespoons peanut oil or vegetable oil, divided
8 ounces savory baked five-spice tofu cakes (about 2 squares), cut into matchstick-size strips
2 cups matchstick-size strips carrots (about 3 medium)
2 cups matchstick-size strips celery (about 3 long stalks)
1/3 cup finely chopped rinsed canned Szechuan preserved vegetable (about 1 1/4 ounces)
1 tablespoon Shaoxing wine (Chinese rice wine) or dry Sherry
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground white pepper
2 teaspoons Asian sesame oil

Add 1 tablespoon peanut oil and swirl, then add tofu and stir-fry until tofu just begins to brown, about 1 minute. Transfer tofu to plate. Add remaining 1 tablespoon peanut oil to same wok (do not clean). Add carrots, celery, and Szechuan preserved vegetable and stir-fry until carrots are crisp-tender, about 3 minutes. Return tofu to wok; add rice wine, salt, sugar, and white pepper. Stir-fry to blend, about 1 minute. Remove pan from heat; stir in sesame oil and serve.

TOFU-CELERY STIR-FRY

Tofu-Celery Stir-Fry image

It's too often relegated to the crudité platter, let celery shine as the star vegetable in this easy plant-based stir-fry. Tofu provides the protein, while ginger, scallions, chili-garlic sauce, and cilantro kick up the flavor.

Time 20m

Yield Serves 2

Number Of Ingredients 10

2 tablespoons tamari
1/2 teaspoon sesame oil
1 teaspoon chili-garlic sauce
2 tablespoons vegetable oil
8 ounces extra-firm tofu, drained, pressed, and cut into matchsticks
Kosher salt
4 celery stalks, cut into matchsticks
2 tablespoons minced fresh ginger
2 tablespoons minced scallion
2 tablespoons minced cilantro stems

Steps:

  • Stir together tamari, sesame oil, chili-garlic sauce, and 1 tablespoon water. In a large nonstick skillet, heat vegetable oil over high until just smoking. Add tofu and cook, turning once, until golden, 4 minutes total. Transfer to a plate.
  • Add celery (and additional oil, if needed) to skillet and cook, stirring often, until crisp-tender, 1 to 2 minutes. Stir in ginger, scallion, and cilantro; cook 30 seconds. Return tofu and add tamari mixture to skillet. Toss to coat; serve.

Tips:

  • Use firm or extra-firm tofu: This type of tofu holds its shape better during stir-frying and absorbs the flavors of the marinade more easily.
  • Press the tofu before cooking: This helps to remove excess water from the tofu, resulting in a firmer texture and better flavor absorption.
  • Marinate the tofu: Marinating the tofu in a flavorful mixture of soy sauce, rice vinegar, garlic, and ginger adds extra flavor and depth to the dish.
  • Use a well-seasoned wok or large skillet: A well-seasoned wok or large skillet helps to prevent the tofu and vegetables from sticking.
  • Stir-fry the tofu and vegetables over high heat: This helps to create a slightly charred exterior and tender-crisp interior.
  • Add a thickening agent: If you want a thicker sauce, add a cornstarch or tapioca starch slurry towards the end of cooking.
  • Serve immediately: Stir-fried tofu and vegetables are best served immediately after cooking, while they are still hot and crispy.

Tofu celery stir-fry is a quick and easy weeknight meal that is packed with flavor and nutrition.
