Time 25m

Yield Makes 8

Number Of Ingredients 8

1 carrot , grated
bunch spring onions , sliced, plus extra strips to serve
1 garlic clove , crushed
3cm/1¼ inch piece ginger , grated
400g block firm tofu , drained and crumbled
2 eggs , lightly beaten
2 tbsp each sesame and vegetable oil
sweet chilli sauce , to serve

Steps:

  • Combine all the ingredients except the oils in a large bowl with some seasoning and mix well. Heat both the oils in a frying pan. Grease an 8cm metal pastry ring or cookie cutter and place in the pan. When hot, pour 5 tbsp of the batter in and turn the heat down to medium.
  • Cook 4-5 mins until golden, then take off the ring (be careful, as it may be hot), flip the pattie and cook the other side. Do this in batches, keeping finished patties warm in a low oven. Serve with the chilli sauce and extra spring onions, if you like.

Tips:

  • To achieve the perfect tofu pastry, it's crucial to press the tofu thoroughly to remove excess moisture. This ensures a flaky and crispy texture.
  • Use extra-firm or firm tofu for the best results. Softer varieties may result in a soggy pastry.
  • Incorporate a combination of almond flour, coconut flour, and tapioca flour to create a gluten-free and grain-free pastry crust.
  • For a vegan alternative, substitute plant-based butter or coconut oil in place of regular butter.
  • Experiment with different seasonings and herbs to create unique flavor profiles. Garlic powder, onion powder, and dried herbs like thyme or oregano are great options.
  • For a sweeter pastry, add a bit of maple syrup or honey to the dough.
  • Work quickly when handling the dough to prevent it from becoming too warm and sticky. Chill the dough if it becomes too difficult to work with.
  • Bake the tofu pastry at a high temperature to achieve a crispy crust and prevent sogginess.

Conclusion:

Tofu pastry offers a versatile and delicious alternative to traditional pastry dough. Its unique blend of flours and tofu creates a flaky, crispy crust that can be used in a variety of sweet and savory applications. Whether you're looking for a vegan, gluten-free, or simply healthier option, tofu pastry is an excellent choice. With a little experimentation, you can create delicious and satisfying pastries that cater to your dietary needs and preferences.
