1 clove garlic (diced)
1/2 cup onion (chopped)
1/2 cup bell pepper (chopped)
1/2 block tofu
1/2 tsp cumin
1/8 tsp cayenne pepper
1/2 tsp black pepper
2 tbsp salsa ((plus extra for serving))
2 medium zucchini ((8 inch))
2 tbsp nutritional yeast
fresh cilantro

Steps:

  • Preheat oven to 400° F.
  • In a medium non stick frying pan heat 2 tbsp water.
  • Cook garlic, onions & bell pepper about 3 minutes.
  • Crumble in tofu then add seasonings & salsa. Add extra 1/4 tsp cayenne for a little kick. Cook about 8-10 minutes.
  • Slice the stem end off the zucchini and cut in half lengthwise. Using a spoon scoop out the inside to create a bowl shape.
  • Place the zucchini on a baking sheet and scoop with filling.
  • Bake 25-30 minutes.
  • After baking sprinkle with nutritional yeast and fresh cilantro.

4 zucchini
1 small onion
2 tomatoes, peeled
2 tablespoons oil
2 tablespoons flour
8 ounces tofu, blended
2 cloves garlic
salt

6 ounces mozzarella cheese, grated,for topping

Steps:

  • In a Dutch oven parboil the zucchini for 10 minutes in boiling water.
  • Remove from the pot and cool.
  • Cut zucchini and half lengthwise and trim the bottoms so they lie flat.
  • Scoop out the insides and salt lightly.
  • Chop zucchini pulp, onion and tomatoes.
  • Set aside.
  • In a 1-quart saucepan heat 1 tablespoon oil.
  • Add flour and cook, stirring, for about 5 minutes.
  • Add the tofu and cook, stirring until thick.
  • Preheat oven to 350 F degrees.
  • In a skillet, heat 1 tablespoon oil and sauté the zucchini, onion and garlic.
  • Remove from heat.
  • Add chopped tomatoes, season with salt and pepper.
  • Stir in tofu sauce.
  • Stuff the zucchini halves with tofu and vegetable mixtures, then top with mozzarella cheese.

1/2 teaspoon salt
1/2 teaspoon ground black pepper

  • 1. Preheat oven to 375 degrees.

1/4 cup chopped fresh dill
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1 small red onion, cut into 1/2-inch pieces
3 cloves garlic, minced
1 14-ounce package firm tofu, drained and coarsely crumbled
1 pint cherry tomatoes, halved
1 5-ounce package baby spinach (about 8 cups)
2 tablespoons shredded parmesan cheese
1 tablespoon fresh lemon juice
2 whole-wheat pitas, toasted and torn into 1-inch pieces

Steps:

  • Put the squash in a large microwave-safe bowl. Add 1 tablespoon dill, a splash of water, and salt and pepper to taste. Cover with plastic wrap, pierce the plastic and microwave until tender, 15 minutes.

1 lb ground beef
1 onion, diced
½ cup rice
1 cup fresh parsley, diced
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon cumin
½ teaspoon cajun seasoning
1 ½ teaspoons garam masala
1 cup water
½ cup olive oil
½ cup Barilla Marinara sauce
½ lemon
1 tablespoon honey silan
2 tablespoons tomato paste
½ tablespoon chili powder
½ teaspoon black pepper
½ teaspoon salt

Steps:

  • In a large pot, boil 1 cup (240 ml) water with rice for 8 minutes. Then, drain the water and, in the same pot, add all of the ground beef mixture and stir well.
  • With a sharp mandolin, peel even strips of the zucchini, cover with salt for 5 minutes (to draw out moisture), then rinse.

4 large zucchini (about 2 pounds)
Kosher salt to taste
3 tablespoons butter
2 large onions, diced
1/2 pound shiitake or other wild mushrooms, chopped
2 cloves garlic, minced
8 slices white bread, crusts removed, diced (about 4 cups)
2 teaspoons lemon juice
Zest of 1 lemon
2 pinches cayenne
2 teaspoons chopped marjoram
1/4 cup chopped hazelnuts
1/4 cup dry bread crumbs

Steps:

  • Slice the zucchini in half lengthwise and spoon out the flesh, leaving boats about 1/3-inch thick. Sprinkle the boats with salt and place upside down on paper towels to drain for 30 minutes. Dice the flesh and set it aside.
  • Meanwhile, preheat the oven to 400 degrees. Melt 2 tablespoons of the butter over medium heat. 1 (14-oz.) package firm or extra-firm tofu, patted dry, cut into 1/2" cubes
Kosher salt
2 medium onions, coarsely chopped
1/3 cup red curry paste
2 large zucchini, cut into 1/2" pieces
1 large or 2 small Japanese eggplant, cut into 1/2" pieces
8 oz. green beans, trimmed, cut into 1" pieces
1 (13.5-oz.) can unsweetened coconut milk
Lime wedges, cilantro leaves with tender stems, and coarsely chopped salted, roasted peanuts (for serving)

Steps:

  • Heat 2 Tbsp. oil in a large skillet, preferably nonstick, over medium-high. Add tofu in a single layer and cook, turning over once, until cooked sides are golden brown, about 4 minutes. Transfer to paper towels to drain. Season with kosher salt.
  • Heat remaining 2 Tbsp. oil in a large pot or high-sided skillet over medium-high. Add onions and a generous pinch of salt and stir to coat. Cook, stirring often, until softened, about 4 minutes. Stir in curry paste and cook, stirring often, until darkened in color, about 2 minutes. Add zucchini, eggplant, and green beans and cook, tossing to coat, until vegetables are softened and starting to brown in spots, 5-7 minutes. 5 tablespoons chopped fresh basil
3 tablespoons olive oil

1 teaspoon grated orange zest

6 small zucchini
2 tablespoons olive oil
1 ½ cups soft bread crumbs
1 egg, beaten
½ cup chicken broth

  • In a small bowl combine tomatoes, 3 tablespoons of basil, oil, 1 tablespoon of parsley, orange peel, lemon peel, 1/2 of the garlic, and salt and pepper to taste. Mix well and set aside for 1 hour at room temperature.
