Steps:
- Trim the thick white fat off the pork chops, cutting carefully around the outside edge. Lay the chops between 2 pieces of plastic wrap and, using a mallet or a rolling pin beat them until the meaty part of the chop is half as thick. You will need to beat around the bone, so turn them over once as you go.
- Beat the egg in a shallow wide bowl with the mustard, oregano, and salt and pepper. On a large plate or platter, combine the breadcrumbs with the Parmesan.
- Press each of the chops into the egg mixture, coating either side. Then dip the eggy chops into the bread crumbs, covering them evenly. Let them lie on a cooling rack to dry slightly while you heat the oil in a large frying pan. When a small cube of bread sizzles if dropped into the oil, then the oil is hot enough. Cook the chops until they are a deep golden color, about 5 to 7 minutes a side (depending on how thin you've managed to get them and how cold they were before going in the oil).
- Meanwhile, quarter the tomatoes and take out the seeds, then cut the shells into strips and dice them. You can take off the skins, too, if you prefer, by steeping the tomatoes first into a bowl of just boiled water for 3 to 5 minutes. Combine the diced tomato, minced or grated garlic, oil, and lemon juice in a bowl, and season well with salt and pepper.
- When the chops are ready, toss the spinach in the tomato mixture until well coated and divide the salad between 2 large plates, putting each chop alongside.

PARMESAN BREADED PORK CHOPS WITH CHUNKY TOMATO SAUCE
This recipe is for 4 thick-cut pork chops you can double the amounts if desired. This is a very good pork chop recipe that I developed recently! A large electric frypan works perfectly for this! Use a thicker-cut of pork chops for this 1/2 to 3/4-inch thickness. Serve the chops and sauce on top of cooked pasta with a side order of recipe#105726 or recipe#152138 --- if you like lots of sauce then increase the tomato sauce by 1 cup or a little more.

TOMATO SMOTHERED PORK STEAKS (OR CHOPS) FOR THE CROCK-POT
A tasty way to use, and stretch, an inexpensive cut of meat -- pork butt steaks. Simmering all day suits less-premium cuts, which don't dry out like boneless pork loin does. Served over pasta or rice, the spinach variation is a meal in one but otherwise you'll probably want a salad. Italian greens like endive or escarole would go particularly well with these flavors. Note: written for a 6-7qt crockpot. Note 2: I don't cook with salt but usually add it at the table. I found that I needed none on this so be cautious if you choose to add salt to the pot.

Steps:
- Cut each steak into 2 or 3 pieces and trim excess fat.
- Pour one can of tomatoes into the bottom of a 6-7qt Crockpot. Top with 1/3 of each of the ingredients, ending with a layer made from half the pork steak pieces.
- Make another layer of 1/3 of everything, ending with the rest of the pork steaks.
- Finish with the remaining ingredients.
- Cook on low for 6-8 hours.
- Remove pork steak pieces carefully (they will probably break up so tongs will work better than a fork).
- Use a slotted spoon to scoop out the veggies and serve them over pasta or rice.
- Top with Parmesan.
- Tip: If you chill the flavorful juices to remove the fat you'll have a delicious starter for soup.
- Note: I do not recommend using an extra-lean cut such as boneless pork loin for this. Extra lean meat tends to dry out in long cooking even when submerged in liquid this way.
- Note: This should be just as good made with beef chuck or chicken thighs.

Tips:
- Choose the right pork chops: Look for chops that are about 1 inch thick and have a good amount of marbling. This will ensure that they stay juicy and flavorful during cooking.
- Season the pork chops well: A simple seasoning of salt, pepper, and garlic powder is all you need to enhance the flavor of the pork chops. You can also add other spices or herbs to taste.
- Sear the pork chops in a hot skillet: This will help to create a nice crust on the outside of the chops, while keeping the inside juicy and tender.
- Cook the pork chops over medium heat: This will allow them to cook evenly without overcooking.
- Use a meat thermometer to ensure that the pork chops are cooked to your desired doneness: The internal temperature of the pork chops should reach 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
- Let the pork chops rest before serving: This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful chop.
Conclusion:
Pork chops are a versatile and delicious cut of meat that can be cooked in a variety of ways. The recipes in this article provide a range of options for cooking pork chops, from simple pan-fried chops to more complex dishes like tomato pork chops and pork chops with applesauce. No matter which recipe you choose, you're sure to enjoy a delicious and satisfying meal.
