TOMATO SALSA

Tomato Salsa image

Provided by Nancy Harmon Jenkins

Categories     side dish

Time 15m

Yield 4 1/2 cups

Number Of Ingredients 8

1/4 cup minced green jalapeno chilies, seeds and veins removed
1 cup minced white onions
15 to 20 ripe red cherry tomatoes
1 large plum tomato
1 orange tomato (see note)
1 medium-size sweet green or yellow pepper, seeds and veins removed
4 to 6 drops Tabasco sauce, or to taste
Salt and freshly ground white pepper to taste

Steps:

  • Put chilies and onions in a bowl.
  • Using a very sharp knife, chop all the tomatoes into rough cubes 1/4 inch or less to a side. There should be about 3 cups altogether. Add the tomatoes, with their juice, to the bowl.
  • Chop the sweet pepper into rough cubes 1/4 inch or less to a side; add to the vegetable mixture and mix thoroughly. Taste, and add a few drops of Tabasco, salt and pepper, adjusting seasonings to taste (remember that the flavors will develop as the salsa sits awhile). Cover loosely with plastic wrap and set aside for at least half an hour. If setting aside or storing for longer periods, salsa may be refrigerated, but the flavors are best just slightly chillier than room temperature. Serve with corn or tortilla chips to dip.

Tips:

  • Choose ripe, juicy tomatoes: The quality of your salsa depends on the quality of your tomatoes. Look for ripe, firm tomatoes with deep red color. Avoid tomatoes that are bruised or have blemishes.
  • Use a variety of tomatoes: Using a variety of tomatoes will give your salsa more flavor. Try using a combination of Roma tomatoes, cherry tomatoes, and heirloom tomatoes.
  • Roast your tomatoes: Roasting your tomatoes before making salsa will intensify their flavor. To roast your tomatoes, preheat your oven to 400 degrees Fahrenheit. Toss the tomatoes with olive oil and salt, then spread them on a baking sheet. Roast for 20-30 minutes, or until the tomatoes are slightly charred and softened.
  • Use fresh herbs: Fresh herbs will add a lot of flavor to your salsa. Try using cilantro, basil, or oregano.
  • Don't over-process your salsa: Salsa should have a chunky texture. If you over-process it, it will become too smooth and lose its flavor.
  • Chill your salsa before serving: Salsa is best served chilled. This will allow the flavors to meld together.

Conclusion:

Making homemade tomato salsa is easy and rewarding. With a few simple ingredients, you can create a delicious and versatile condiment that can be used to add flavor to tacos, burritos, nachos, and more. So next time you're looking for a quick and easy snack or appetizer, give this tomato salsa dip a try. You won't be disappointed!
