1/2 cup thinly sliced roasted sweet red peppers
1/2 cup fresh basil leaves, thinly sliced
3 tablespoons pine nuts, toasted
2 tablespoons plus 1-1/2 teaspoons olive oil
1 tablespoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Fill a 6-qt. stockpot two-thirds full with water; bring to a boil. Add beans; cook, uncovered, 8-10 minutes or until crisp-tender. Remove beans and immediately drop into ice water. 1 pound fresh or frozen thin (French Style) green beans
2 tomatoes, cut in wedges
1 small onion, sliced thin
1/4 cup grated Parmesan cheese
1/3 cup olive oil
2 Tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon prepared yellow mustard
dash black pepper

Steps:

  • Bring a medium saucepan of salted water to boil. (1/2 teaspoon salt for every cup water).
  • Add green beans and cook until tender but not completely soft, approximately 5 minutes.
  • Prepare vinaigrette by mixing together oil, red wine vinegar, garlic, salt, mustard and pepper.
  • Add cooked beans directly to dressing while still warm. Toss to coat.
  • Cover and refrigerate for a minimum of 45 minutes.
  • Just before serving, gently mix in tomato wedges and onion slices. Sprinkle with Parmesan cheese.

3 tbsp olive oil
1 tbsp red wine vinegar
1 tbsp dry oregano
1 clove garlic (crushed)
dried red chili pepper (optional)
1/2 tsp salt (or to taste)
2 tbsp fresh chopped parsley

Steps:

  • Bring a large pot of salted water to a boil. Trim the ends of the beans, rinse and boil until fork tender, about 5 minutes. At this point you can drain them and add them directly to a bowl for serving. Or, if you wish to retain their vibrant green color, plunge them into a large bowl of icy water and drain immediately. Transfer to a large bowl.
  • Add the remaining ingredients: olive oil, red wine vinegar; crushed garlic clove; dry oregano; dried red chili (optional); fresh chopped parsley and salt, to taste.

1 lb. fresh green beans
2 large ripe tomatoes, cut in wedges
1 med. red onion, halved and thinly sliced, rings seperated
1/3 c. freshly grated parmesan cheese
3/4 c. kalmata (or black)olives, pitted
VINAIGRETTE DRESSING:
1/3 c. olive oil
1/3 c. red wine vinegar
1 clove garlic, minced
1 tsp. salt
1/2 tsp. dark coarse grain mustard
black pepper to taste

Steps:

  • Wash and remove the ends from beans. Heat a pot of salt water to boiling. Place beans in boiling water and cook uncovered for 5 minutes. Cover and cook for no longer than 10 minutes more, until crisp-tender. Drain and rinse under cold water just to stop the cooking. Beans should remain slightly warm to absorb the dressing. Place the beans in a large bowl with the olives, onions, and tomato wedges. While the beans are cooking, prepare the vinaigrette. Place all of the ingredients in a blender, and process until oil and vinegar are incorporated. Pour the vinaigrette over the vegetables in the bowl, and toss to coat. Refrigerate for at least 2 hours. Just prior to serving, sprinkle with parmesan cheese and toss.

1 tablespoon stone ground mustard

1 large head radicchio
1 large head bibb lettuce

Steps:

  • Cook beans in 2 quarts boiling, salted water until crisp-tender, about 7 minutes.
