2 cups sifted all-purpose flour
1/4 ounce dried yeast (1 packet)
1 teaspoon kosher salt
1/4 cup, plus 1 tablespoon sugar
1 teaspoon ground mace
1 teaspoon ground cinnamon
1/4 cup grapeseed oil
2 egg yolks
1 1/4 cups cold, light beer
3 egg whites
Canola oil, for deep-frying (enough to submerge the beignets)
1 cup heavy cream
1 cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground mace
1 tablespoon granulated sugar
1/4 cup powdered sugar
5 small bananas, peeled, cut in 1/2 crosswise; or 3 regular bananas, peeled, cut in 1/2 lengthwise and again crosswise
1 ripe mango, peeled, cut into 10 strips
10 thick strips pineapple
Powdered sugar
20 mint leaves, shredded, for garnish
Vanilla-Cinnamon Almibar, recipe follows
1 vanilla bean, split in half lengthwise
1 cup sugar
1 cup water
1 stick cinnamon
2 tablespoons fresh-squeezed lime juice

Steps:

  • Combine the sifted flour, yeast, salt, 1/4 cup of sugar, and the spices in a large bowl. In another bowl, combine the grapeseed oil, egg yolks, and beer. Combine the dry and wet ingredients and whisk until all the lumps are gone.
  • Set a mixer on medium-high speed and in another bowl, whip the 3 egg whites with the remaining tablespoon of sugar to a medium-soft peak. Carefully fold the egg whites into the beer batter. Let this mixture rest covered, at room temperature for 1 hour.
  • In a fryer or deep pot heat the oil to 375 degrees F.
  • Whip the heavy cream by hand or with an electric mixer until it becomes stiff. Set aside.
  • Combine the flour, cinnamon, mace, and granulated sugar. Coat the fruit with this, shaking off the excess. Now dip each piece of fruit into the batter, and drop 1 by 1 into the hot oil. Cook the beignets until they are golden brown. Place them on a large plate lined with paper towels, gently patting them to soak up excess oil.
  • Dust with powdered sugar and serve immediately with the whipped cream topped with mint leaves.
  • For even more flavor, serve drizzled with Almibar Syrup.
  • Combine all of the ingredients in a saucepan, bring them to a boil, then let them simmer uncovered for 15 minutes, until the mixture is slightly golden and syrupy and reduced to about 1 cup. Remove the vanilla bean and cinnamon stick. Refrigerate the syrup. It will keep for up to 2 months.

2 1/2 cups coconut milk
1 cup superfine sugar (scant)
6 egg yolks
1 1/3 cups dry unsweetened coconut
2/3 cup heavy cream
1 tablespoon coconut rum (optional)
2 papayas, peeled and seeded
2 carambolas
2 kiwi, peeled
1 tablespoon superfine sugar
4 tablespoons coconut rum (optional)

Steps:

  • Pour the coconut milk into a pan and heat gently. Remove from the heat. Put the sugar and egg yolks in a large bowl and whisk together until pale and the mixture leaves a trail when the whisk is lifted. Slowly add the coconut milk, stirring all the time with a wooden spoon. Strain the mixture into the rinsed-out pan or a double boiler and cook over low heat for 10-15 minutes, stirring all the time, until the mixture thickens enough to coat the back of the spoon. You may find that the mixture starts to separate, and if it does, simply whisk it vigorously until it is smooth again. Do not leat the mixture boil or it will curdle.
  • Remove the custard from the heat, stir in the dry unsweetened coconut, then let cool for at least 1 hour, stirring from time to time to prevent a skin from forming. Meanwhile, whip the cream until it just holds its shape. Keep in the refrigerator until ready to use. When the custard is cold, add the coconut rum, if using, and mix well together.
  • If using an ice-cream machine, fold the cold custard into the whipped cream, then churn the mixture in the machine following the manufacturer's instructions. Alternatively, freeze the custard in a freezerproof container, uncovered, for 1-2 hours, or until it starts to set around the edges. Turn the custard into a bowl and stir with a fork or beat in a food processor until smooth. Fold in the whipped cream. Return to the freezer and freeze for an additional 2-3 hours, or until firm or required. Cover the container with a lid for storing.
  • To prepare the tropical fruits, thinly slice and put in a large shallow dish. Sprinkle sugar and coconut rum, if using, over the fruit, then cover and let chill in the refrigerator for 2-3 hours before serving with the ice cream.

3 inches cinnamon sticks
1 medium banana, peeled and sliced
lemon juice
1 star fruit, sliced (carambola)
1 large firm ripe mango, peeled, pitted, and sliced (or papaya)
1 kiwi fruit, peeled and sliced
6 wooden skewers, each about 6 inches long (or metal)
vanilla ice cream
1/3 cup toasted flaked coconut

Steps:

  • Heat the honey and cinnamon stick in a small saucepan over low heat. When hot (but not boiling) remove from heat and set aside.
  • Peel and slice banana. Brush the slices lightly with lemon juice to stop fruit from browning.
  • Add one slice each of banana, star fruit, papaya or mango, and kiwifruit to each skewer. Brush fruit on skewers with the cinnamon-honey mixture.
  • To serve, spoon ice cream into serving dishes, sprinkle with toasted coconut. Top ice cream with kabobs.

Steps:

  • Stir together mango purée, coconut milk, cream, corn syrup, lemon juice, and vanilla in a bowl until combined well.
  • Bring milk just to a boil in a 2- to 3-quart heavy saucepan. Whisk together yolks, sugar, and a large pinch of salt in a bowl, then add hot milk in a stream, whisking. Pour custard into saucepan and cook over moderately low heat, stirring with a wooden spoon, until it registers 170 to 175°F on thermometer, 2 to 3 minutes.
