Steps:

  • With a slender knife cut a 3-inch pocket along length of thickest side of chicken (or have a butcher do this for you). In a mixing bowl combine the cheese with chopped herbs of your choice and season to taste with salt and pepper. Stuff a quarter of this mixture into each pocket and secure pocket with toothpicks.
  • Season the outside with salt and pepper. Heat the olive oil in a non-stick pan and saute the chicken, skin side down for 5 to 6 minutes over moderate heat. Turn over and cook for 5 minutes longer or until chicken is cooked through. Remove toothpicks and serve over the salad.

4 skinless, boneless chicken breasts
1 loaf Italian bread, crust removed and cut into 1-inch cubes
⅓ cup milk
4 tablespoons olive oil, divided
2 shallots, minced
1 pound cremini mushrooms, chopped
kosher salt and ground black pepper to taste
¼ cup grated Parmigiano-Reggiano cheese
2 tablespoons white truffle oil
1 large egg

Steps:

  • Lay the chicken breasts flat and make a slit using a very sharp knife, but do not go all the way through. This will make a nice pocket for the stuffing. Pound the breasts evenly using a meat mallet or small saute pan. Cover with plastic wrap and refrigerate.
  • Place bread in a bowl and pour milk over; let soak for 10 minutes.

6 skinless, boneless chicken breast halves - pounded thin
1 (8 ounce) bottle Italian-style salad dressing
8 slices of stale wheat bread, torn
¾ cup grated Parmesan cheese

½ cup sour cream
