TUNA PANINI MELT
Steps:
- Mix tuna, mayonnaise, balsamic vinegar, onion, and dill pickle together in a bowl.
- Spread tuna mixture over 2 slices of bread. Top with American cheese and remaining 2 slices of bread.
- Cook in a panini press until bread is crispy and cheese is melted, 3 to 4 minutes.

TUNA AND PEPPER PANINI MELT
I recently acquired a panini grill and this is the first recipe that I tried on it. And is it ever good!

Steps:
- In a bowl, mix together the tuna, red pepper, celery, green onions, mayonnaise, yogurt, capers, cumin, pepper, salt and cayenne pepper.
- Cut the buns in half horizontally.
- Spread the tuna mixture evenly over the bottom half of each.
- Sprinkle each evenly with cheese.
- Replace the bun tops.
- In a nonstick skillet or panini grill, cook the sandwiches over medium heat, pressing often to flatten and turning once (no need to turn if using a panini grill), for about 5 minutes or until crusty and the cheese is melted.

SIMPLE TUNA MELT
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Place bread slices in the oven to toast while it preheats, and while you make the tuna salad.
- In a small bowl, mix together the tuna, mayonnaise, salt, balsamic vinegar, mustard and dill pickle until well blended. Remove bread from the oven, and pile the tuna mixture onto one slice. Sprinkle cheese over the other slice of bread.
- Bake for 7 minutes in the preheated oven, or until cheese is melted and tuna is heated through. Place the cheese side of the sandwich on top of the tuna side. Cut in half and serve immediately.
