3 pounds ground turkey breast
1 (6 ounce) package chicken-flavored dry bread stuffing mix
2 eggs
16 hamburger buns, split

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Heat the butter in a skillet over medium-low heat, and cook and stir the onion and celery until the onion is soft and translucent, about 5 minutes.
  • Place the cooked onion and celery in a large bowl with the ground turkey, stuffing mix, and eggs; mix to thoroughly combine. Form the mixture into 16 patties. Unlike hamburger, these patties will not change shape while cooking, so make them even in size.

The consistency is much improved too. If you like cilantro and mango flavors, you will love these delicious burgers. So easy to make and can be made a day ahead.

1/2 serrano pepper
1/4 cup sweetened coconut
1/2 lime, juice of
1 lime, zest of
2 mangoes
1/2 teaspoon paprika
1/4 cup chopped fresh cilantro
honey or sugar substitute
2 lbs ground turkey
2/3 small onion, diced small
1/2 cup mango salsa (or double sauce recipe substitute 1/3 cup sauce)
1 garlic clove
2 teaspoons paprika
1/4 cup chopped fresh cilantro
2 egg whites
1/3 cup seasoned bread crumbs
salt and pepper
8 whole grain buns

Steps:

  • In food processor combine Serrano pepper, coconut, lime juice, zest, paprika, cilantro and sugar. Blend until Serrano pepper is in tiny bits. Add mango's and pulse until smooth. Taste and add more sugar or pepper if needed. Reserve 1/3 of sauce in separate bowl for basting.
  • In a bowl combine ground turkey, cilantro, onion, garlic, paprika, egg whites, bread crumbs and salt and pepper. Incorporate salsa or sauce a little at a time checking to make sure patties hold up. Add more bread crumbs or use less salsa/ sauce if necessary. Form into patties and refrigerate until ready to grill.
  • Preheat grill to 400 degrees and brush rack with oil. Grill patties and turn carefully, basting with reserved mango coconut pepper sauce until interior temperature reaches 170 degrees. Using a clean brush, spread small amount of mango coconut pepper sauce onto bottom bun, place turkey on top of bun and spread more sauce on top of burger. Serve with "Zesty Pineapple Slaw.".

Steps:

1 medium onion, thinly sliced
1/2 cup grape tomatoes, halved
1 large garlic clove, thinly sliced
4 tablespoons extra virgin olive oil, divided
salt & freshly ground black pepper
1/2 lb ground turkey
2 tablespoons dry white wine or 2 tablespoons dry red wine
1 -2 ounce extra-sharp cheddar cheese, cut into 1/4- to 1/2-inch cubes (optional)
2 large whole grain buns

Steps:

  • Put 2 tablespoons of the olive oil in a 10-inch nonstick skillet and heat over high. Add onions and tomatoes with generous sprinkles of salt and pepper. Sauté over high, stirring frequently, until onions begin to brown.
  • Add garlic and cook until onions are wilted and soft. Remove from heat. Set aside half the onion mixture for topping burgers.
  • Blend ground turkey with remaining onion mixture, 1/4 teaspoon salt and 1/8 teaspoon pepper. Shape into 2 balls.

  • Lower heat to medium-low and cook about 5 minutes per side, or until there is no pink at center of burger and an instant-read thermometer measures at least 150 degrees
  • These burgers can also be grilled if you prefer.
  • Serve hot on buns, topping with reserved onions and your favorite condiments.
