- In a large bowl combine, first six ingredients.
- Shape turkey mixture into patties.
- Add the oil to a skillet on the stove, heat on medium heat.
- Add patties, fry on one side for 10 to 12 minutes than flip over and repeat. (Keep a check on the turkey patties to keep from burning them. Flip earlier if needed)
- While frying prepare the Mustard Sauce.
- Add mayonnaise and rest of the honey mustard sauce to a small bowl.
- Stir well to combine.
- Spread sauce on each kaiser roll
- Add turkey pattie on one side of roll and top with more sauce than.
- Add tomato slice and avocado slice on top,than other half of roll.

- Heat one tablespoon of the oil in a heavy skillet. Saute the shallots over medium heat until they begin to turn golden. Remove the pan from the heat, scrape half the shallots into a mixing bowl and reserve the rest in a small dish.
- Add the turkey, one tablespoon parsley, one tablespoon mustard and the bread crumbs to the bowl. Mix until the ingredients are well blended. Shape the mixture into eight patties of equal size, each about three-fourths of an inch thick.
- Heat the remaining oil in the skillet. Add the patties and saute over medium heat about 10 minutes, turning them once, until they are cooked through. Remove the patties to a warm platter and cover with foil.
- Return the reserved shallots to the pan and stir in the remaining mustard along with the brandy and stock. Cook, stirring, a minute or two until the sauce thickens slightly. Season to taste with salt and pepper and stir in the remaining parsley.
- Pour the mixture over the patties and serve.

TURKEY BURGERS WITH ORANGE MUSTARD GLAZE

- Prep the burgers: Combine the salt, paprika, pepper and granulated garlic in a small bowl. Form 6 turkey patties and sprinkle on both sides with the seasoning mixture.
- Make the glaze: Heat the vegetable oil in a medium skillet over medium-high heat. Add the onion, garlic and jalapenos and saute until the onion is translucent, about 10 minutes. Add the marmalade, mustard, black pepper and chili powder and cook about 2 minutes, until fully combined. Reserve until ready to use.
- Preheat a grill to high. Grill the patties until nice markings are shown, about 5 minutes per side, then reduce the flame to medium and cook until well done, 12 more minutes, flipping after 5 minutes. At the same time, toast the buns on the grill.
- Serve the burgers on the buns; top with the glaze, lettuce, tomato and red onion. Serve with pickles.

- For the turkey patties: In a large bowl, combine the turkey, ricotta, sage, soy sauce, Worcestershire sauce, Dijon and sprinkle with some salt and pepper. Divide into 4 equal patties and press them into 1/4-inch-thin rounds.
- Heat a cast-iron griddle pan to medium-high heat.
- Add the canola oil and sear the patties on the first side until golden brown, 3 to 4 minutes. Flip and cook for another 3 to 4 minutes until cooked through.
- For the sandwich build: Place a slice of Swiss cheese on each piece of bread, then a turkey burger, followed by about 1/4 cup Caramelized Onions. Place the top piece of bread on and then butter each side of the sandwich.
- Griddle each side over medium heat until golden, 2 to 3 minutes on each side. If you have a metal bowl, cover the sandwiches so they steam a bit and the cheese will melt faster. Serve with good ol' yellow mustard if you like and a big pile of oven fries.
- Heat a large heavy-bottomed pot over medium-high heat. Add the butter and olive oil, let the butter mel,t and then add in the onions and toss to coat. Sprinkle with salt and pepper, and then cover the pot and lower the heat to medium-low.
- Let the onions sweat, steam and soften for 10 to 15 minutes. Uncover the pan and let the onions cook for about an hour, checking on the onions frequently and stirring.
- Once the onions are fully caramelized, and a deep golden color, add the sherry and scrape up any bits from the bottom of the pan. Stir in the thyme, season with salt and pepper and set aside.

- In a medium bowl, stir together turkey, basil, salt, pepper, and garlic powder. Form into 4 patties.
- In a large nonstick skillet, heat 1 T. oil over medium-high heat, swirling to coat the bottom. Cook the patties for 5 minutes; turn over and cook for 4 minutes, or until no longer pink in the center. Transfer to a plate, and cover to keep warm.
- Still on medium high, heat the remaining 1 1/2 teaspoons oil in the skillet, swirling to coat the bottom. Cook the mushrooms, onion, and cayenne for 4 minutes, or until the onion is soft, stirring frequently. Remove from heat.
- To serve, spread the mustard over the patties, and top with the mushroom mixture.

- Place turkey, onion, cilantro, mustard, and 1 teaspoon salt in a medium bowl. Season with pepper, and mix gently. Shape into four 1/2-inch-thick patties, cover, and refrigerate until cold and firm, about 30 minutes.
- Puree mayonnaise, sour cream, chile, and adobo sauce. Cover, and refrigerate for up to 1 day.

- Heat the butter in a saucepan and add the onion. Cook, stirring occasionally, until wilted.
- Put 1 cup of the bread crumbs in a mixing bowl and add the broth. Stir. Add the cooked onion, nutmeg, parsley, egg, salt and pepper. Add turkey and blend well. Divide the mixture into 8 equal portions.
- Sprinkle remaining 1/2 cup of bread crumbs on a flat surface and roll each portion in bread crumbs.
