1 teaspoon olive oil
1 package (6 ounces) fresh baby spinach
1 cup sliced fresh mushrooms
7 large eggs, divided use
1 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1/8 teaspoon pepper
1/2 pound thinly sliced deli ham
1/2 pound thinly sliced hard salami
1/2 pound sliced provolone cheese
2 jars (12 ounces each) roasted sweet red peppers, drained, sliced and patted dry

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. Unroll 1 tube of crescent dough and separate into triangles. Press onto bottom of prepared pan to form a crust, sealing seams well. Bake until set, 10-15 minutes., Meanwhile, in a large skillet, heat oil over medium-high heat. Add spinach and mushrooms; cook and stir until mushrooms are tender. Drain on several layers of paper towels, blotting well. In a large bowl, whisk 6 eggs, Parmesan cheese, Italian seasoning and pepper., Layer crust with half of each of the following: ham, salami, provolone cheese, red peppers and spinach mixture. Pour half of the egg mixture over top. Repeat layers; top with remaining egg mixture., On a work surface, unroll and separate remaining crescent dough into triangles. Press together to form a circle and seal seams; place over filling. Whisk remaining egg; brush over dough., Bake, uncovered, until a thermometer reads 160°, 1 to 1-1/4 hours, covering loosely with foil if needed to prevent overbrowning. 1 tablespoon salted butter
1 red bell pepper
1 (24 ounce) package Simply Potatoes Homestyle Slices
1 (12 ounce) package pepper bacon
4 eggs

Steps:

  • Pre-heat oven to 350 degrees. Use 1/2 tablespoon of butter to grease an 8 x 8 glass baking dish and set aside.
  • Cook peppered bacon until crispy and set aside to cool on a plate lined with a paper towel.
  • Julienne red bell pepper into 1 inch long slices. Heat 1/2 tablespoon butter in a non-stick skillet over medium-high heat. When pan is hot, add red pepper slices and sautee until they start to brown but aren't soft (about 3-4 minutes).
  • Layer Simply Potato Country Style Slices in the buttered baking dish. Crumble bacon and spread over potatoes. Sprinkle red bell pepper slices over the top. Cover dish with foil and bake at 350 degrees for 25 minutes.
  • Take dish out of oven, discard foil, crack 4 eggs (placing one in each quadrant) over dish, place back in oven, and bake the remaining 10 minutes uncovered.
  • Pull out of oven, slice, and serve immediately. Egg yolks should still be runny when slicing. Can be made ahead and baked within 24 hours.

I'm not sure where she first got the recipe but it's a hit with everyone who tastes it! We make this "egg bake" for every holiday brunch and it's regularly delivered to friends and neighbors with new babies or who are grieving which is where the love comes in. It's easily made ahead and just popped into the oven an hour before meal time. So many emotions and memories are tied up in this deceptively simple but definitively delicious breakfast casserole! Tip: I prefer Newman's Own Italian dressing, either lite or regular, in the small bottle.

1 (20 ounce) package Simply Potatoes O'Brien Hash Browns
12 eggs
7 ounces ham steaks, cut into 1-inch dice (good quality)
8 cups cheese, shredded (sharp cheddar or cheddar or pepper jack mix preferred)
1 (8 ounce) bottle Italian salad dressing

Steps:

  • Heat the oven to 400 degrees and lightly grease a 13" x 9" glass casserole dish.
  • In a large saute pan, heat about 2 tablespoons of butter or oil. Add the entire bag of the O'Brien potatoes and lightly salt and pepper the potatoes. Brown the potatoes, stirring occasionally to prevent sticking or burning, add more butter or oil if necessary.
  • Add the browned potatoes to the 13" x 9" casserole, spreading to cover the bottom.
  • Lightly brown the diced ham in the saute pan with a little bit of butter or oil, if necessary.
  • Spoon the ham in an even layer on top of the potatoes in the casserole dish. Sprinkle 1/2 of the cheese across the ham.
  • Make-Ahead Tip: The casserole can be prepared to this point up to 24 hours in advance. Cover with casserole lid or plastic wrap and foil and refrigerate. When ready to bake, continue with the directions as written below. You may need to bake a bit longer since the ingredients will be cold.
  • Crack all 12 eggs into a blender or food processor. Add a 1/2 cup of lukewarm water and 1/2 of the salad dressing (about 4 oz.). Blend until well combined and bubbles start to form on top of the egg mixture.
  • Carefully pour egg mixture over the cheese, ham and potatoes in the casserole dish. Sprinkle the top of the eggs with the remaining dressing and shredded cheese.
  • Bake uncovered in a 400 degree oven for 15 minutes to start to set the eggs. Turn the oven down to 350 degrees without removing the casserole or opening the oven door.
  • Bake for another 40-50 minutes until the egg bake is set and the cheese on top is beautifully browned. You may check that the eggs are done by inserting a toothpick in the middle of the dish, it should be mostly dry.
  • Slice in squares and serve alongside a fruit or green salad. This dish goes very well with a mimosa!

1 pound baby portobello mushrooms, quartered
1 large onion, chopped
1 medium sweet red pepper, chopped

8 slices Italian bread (1 inch thick)
12 large eggs
1 cup 2% milk
1 teaspoon Italian seasoning

4 cups shredded Italian cheese blend

Steps:

  • In a large skillet, cook sausage, mushrooms, onion, peppers and garlic over medium heat until meat is no longer pink; drain and set aside., In a large skillet coated with cooking spray, saute spinach until wilted. Place bread on a baking sheet. Broil 2-3 in. from heat for 1-2 minutes or until lightly browned. Transfer to a greased 13x9-in. baking dish., In a large bowl, combine eggs, milk, Italian seasoning, salt, pepper and nutmeg. Layer sausage mixture and spinach over bread; pour egg mixture over top. 20 ounces Simply Potatoes® Shredded Hash Browns
1 lb jimmy dean maple sausage
2 tablespoons flour
3 cups milk, I used whole milk
4 eggs

Steps:

  • Preheat oven to 400°.
  • Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
  • Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
  • Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
  • Add flour and cook, stirring often, for 2 minutes.
  • Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
  • Pour 3/4 cup gravy into each ramekin over the potatoes.
  • Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
  • Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

1 lb sausage (I use smoked sausage)
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
4 ounces diced onions
1 tablespoon minced garlic clove
8 ounces shredded cheese (I use cheddar)
1 (4 ounce) can croissants
salt
pepper
olive oil

Steps:

  • Preheat your oven to 350 degrees.
  • Place a little olive oil in a skillet and fry the sausage. Once your sausage is browned, add the hash browns and onions right in with it. Mix the sausage and potatoes together and let them start to brown once again.
  • In the meantime, put some olive oil in the bottom of a 9X13 baking pan. Unroll the croissants in the pan and push them out to ensure they cover the bottom of the pan. Put the pan in the oven for about 8-10 minutes, just enough for the dough to start to brown.
  • Once you pull the croissants out of the oven you can spread your sausage and potato mixture on top of it and add some salt and pepper.
  • Beat all 12 eggs together in a mixing bowl and pour over the top of the mix in the baking pan.
  • Put your casserole in the oven. It should taken roughly 1 hour to cook. Check occasionally by poking a knife in the center to see if the eggs have cooked. Once the eggs have cooked through, remove from the oven and sprinkle the cheese on top. Place in back in the oven just long enough to melt the cheese.
