Panzanella salad is a rustic easy-to-make Italian dish, made with stale bread, soaked in water and vinegar, plus tomatoes, cucumbers, onion and basil. All seasoned with extra virgin olive oil and salt. Panzanella salad is a typical dish of Tuscan cuisine and, more generally, of central Italy. Tuscany with Umbria, Lazio and Marche contend for its origin. This is a dish of the peasant tradition, a recovery dish created to use stale bread, like the famous Pappa al Pomodoro, a very simple yet very tasty Italian recipe.

ITALIAN PANZANELLA BREAD SALAD

Italian Panzanella Bread Salad image

Italy's famous bread salad is usually associated with Tuscany, but my husband's father emigrated from Sicily, so I made up this version of bread salad using the flavors of Sicilian cuisine.

Provided by josephinecooks

Categories     Salad

Time 1h32m

Yield 10

Number Of Ingredients 16

8 ounces country style white bread, cut into 1 inch cubes
3 tablespoons garlic flavored olive oil
½ teaspoon coarse salt
1 (15 ounce) can garbanzo beans, rinsed and drained
2 cups red or yellow teardrop tomatoes, halved
⅓ cup chopped green bell pepper
⅓ cup chopped red bell pepper
1 small red onion, cut into 3/4 inch slices
10 kalamata olives, pitted and halved
⅓ cup basil pesto
¼ cup balsamic vinegar
1 tablespoon minced fresh rosemary
¼ teaspoon black pepper
4 ounces crumbled goat cheese
1 head green or red leaf lettuce
¼ cup toasted pine nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss the bread cubes with the olive oil to evenly coat. Sprinkle with salt, and toss again. Spread the cubed bread evenly over a baking sheet, and bake in the preheated oven until golden brown, about 12 minutes. Remove from oven and allow to cool completely.
  • Toss together the garbanzo beans, tomatoes, peppers, onion, and kalamata olives in a large bowl. In a separate bowl, whisk together the pesto, balsamic vinegar, rosemary, and pepper. Toss the tomatoes with the pesto mixture, and let stand at room temperature for 30 minutes to 1 hour.
  • To serve, toss the toasted bread cubes and goat cheese with the tomato mixture. Line a serving platter with a few lettuce leaves. Shred the remaining lettuce, and mound in the center of the platter. Spoon the bread mixture over the lettuce, and sprinkle with toasted pine nuts.

Tips:

  • Use stale bread: Stale bread is the traditional choice for panzanella, as it absorbs the dressing better and holds its shape when tossed with the other ingredients.
  • Choose a flavorful bread: A good quality bread with a slightly chewy texture, such as a Tuscan bread or a sourdough, will give your panzanella the best flavor.
  • Cut the bread into small cubes: This will help the bread to soak up the dressing evenly and prevent it from becoming too soggy.
  • Use a variety of vegetables: The classic panzanella includes tomatoes, cucumbers, and onions, but you can also add other vegetables such as zucchini, bell peppers, or artichokes.
  • Use a good quality olive oil: The olive oil is the star of the show in panzanella, so be sure to use a good quality extra virgin olive oil.
  • Season the salad well: Panzanella should be well-seasoned with salt, pepper, and herbs. You can also add a splash of red wine vinegar or lemon juice to brighten the flavors.
  • Let the salad rest: After you toss the salad, let it rest for at least 30 minutes before serving. This will allow the flavors to meld and the bread to soften slightly.

Conclusion:

Panzanella is a delicious and refreshing salad that is perfect for a summer meal. It is easy to make and can be customized to your own liking. With its combination of fresh vegetables, flavorful bread, and tangy dressing, panzanella is a surefire crowd-pleaser. So next time you are looking for a light and healthy lunch or dinner, give panzanella a try!
