Steps:

  • In a small bowl, melt white chocolate in microwave (heat for 30 seconds, stir, and repeat until completely melted smooth).
  • In a medium bowl beat heavy cream until it holds soft peaks.
  • In a medium bowl, beat pudding into milk for 2 minutes.
  • In a large bowl beat together cream cheese, confectioners' sugar, vanilla, and a pinch of salt until creamy smooth. Beat in the melted white chocolate.

1 (18 ounce) package vanilla sandwich cookies (such as Oreo Golden Original Sandwich Cookies®)
1 vanilla bean, split lengthwise and seeds scraped
¼ cup butter, melted
2 pounds cream cheese, softened
1 ½ cups white sugar
5 eggs
2 vanilla beans, split lengthwise and seeds scraped
1 tablespoon pure vanilla extract
¾ cup sour cream
½ cup heavy cream

Steps:

  • Preheat oven to 300 degrees F (150 degrees C), and lightly butter a 10 inch springform pan.
  • Place the sandwich cookies into a plastic bag, and crush with a rolling pin. Pour the crumbs into a bowl, and mix with the scraped seeds of 1 vanilla bean. Drizzle the crumbs with melted butter and stir to combine. Press the crumb mixture firmly into the bottom and up the sides of the springform pan, and set aside.
  • Place the softened cream cheese and sugar into the work bowl of an electric mixer, and beat for about 3 minutes on Medium speed, until the mixture is smooth. Beat in the eggs one at a time, incorporating each egg before adding the next one. 3 tablespoons melted butter
4 (8 ounce) packages cream cheese (Softened at room temperature)
1 1/2 cups sugar
1 teaspoon vanilla
1 cup sour cream
4 eggs
6 -8 squares BAKER'S Semi-Sweet Chocolate, melted, cooled

Steps:

  • Preheat oven to 325 degrees. Line 13x9 baking pan with aluminum foil and allow end to extend over the sides of the pan.
  • Mix the cookie crumbs and melted butter and press firmly into the bottom of the prepared pan. You can use a measuring cup or the bottom of a glass to press the crust. Bake the crust for 10 minutes.
  • Beat cream cheese, sugar and vanilla in a large bowl with an electric mixer on medium speed until well blended. Add sour cream and mix well. Add eggs one at a time beating on low speed after each addition just until blended.
  • Remove 1 Cup of the batter and set it aside. Stir melted chocolate into remaining batter in large bowl. Pour mixture over the crust.
  • Top with spoonfuls of the remaining 1 Cup of plain batter.

7 tablespoons unsalted butter
1 1/2 cups graham-cracker crumbs (about 11 crackers)
1 1/4 cups sugar
2 pounds cream cheese, room temperature
1 vanilla bean, split in half lengthwise
4 large eggs, lightly beaten
1 cup sour cream
Pinch of salt
6 ounces semisweet chocolate, chopped
4 tablespoons heavy cream

Steps:

  • Heat oven to 350 degrees. In a small saucepan, melt 5 tablespoons butter. In a medium bowl, combine graham-cracker crumbs and 1/4 cup sugar. Stir in melted butter until crumbs are moist. Pour mixture into a 9-inch springform pan; press firmly, forming a 1/2-inch crust up sides of pan. Bake until set, 12 to 15 minutes. Transfer to a wire rack.

1/3 cup fat-free caramel topping

Steps:

  • Heat oven to 300°F. Spray springform pan, 9x3 inches, with cooking spray. Sprinkle cookie crumbs over bottom of pan.
  • Beat cream cheese in medium bowl with electric mixer on medium speed until smooth. Add sugar, egg whites and vanilla. Beat on medium speed about 2 minutes or until smooth. Add yogurt and flour. Beat on low speed until smooth.
  • Carefully spread batter over cookie crumbs in pan. Bake 1 hour. Turn off oven; cool in oven 30 minutes with door closed. Remove from oven; cool 15 minutes. Cover and refrigerate at least 3 hours.
  • Drizzle caramel topping over cheesecake. Garnish with pecan halves. Store covered in the refrigerator.

1 1/2 cups finely crushed graham crackers
1/4 cup sugar
1/2 cup butter, melted
1 egg yolk, beaten
1/4 teaspoon vanilla
16 ounces cream cheese, softened
1 cup sour cream
2 tablespoons cornstarch
1 cup sugar
2 tablespoons butter, softened
1/2 teaspoon vanilla
vanilla bean, from one pod
1 cup whipping cream
2 tablespoons powdered sugar
4 ounces cream cheese, softened
4 ounces white chocolate baking squares, melted
1 cup whipping cream
1 tablespoon powdered sugar
beans from one vanilla pod

Steps:

  • CRUST:Crush the graham crackers. Mix in the sugar. Add the egg yolk and vanilla, then stir in the melted butter. Line a springform pan with non-stick foil. Press graham crackers into the pan. Bake at 375º for 8 minutes or until edges are slightly brown. Remove and let cool.
  • CHEESECAKE: Combine cream cheese, sour cream, corn starch and sugar, mix until sugar is dissolved. Add butter, vanilla and beans, blend until smooth. Don't overmix.
  • Bake at 350F 30 to 35 minutes. Cool 1 hour.
  • WHITE CHOCOLATE MOUSSE In a cold mixing bowl beat cream until soft peaks form. Gradually add powdered sugar until stiff peaks form. Put this in a bowl in the fridge. Don't wash your mixing bowl, beat the cream cheese in it, until fluffy. Add the white chocolate and beat until smooth. Fold in the whipped cream.
  • VANILLA BEAN WHIPPED CREAM In cold mixing bowl, beat whipping cream until soft peaks form. Gradually add powdered sugar and then vanilla beans, beating until stiff peaks form.
  • After the cheesecake has cooled spread the mousse evenly on top. Refrigerate for about an hour then spread the whipped cream on top. Refrigerate several hours before serving.

This recipe is from the Oregon Chai website. I LOVE Oregon Chai- because of course I am from Oregon- but its great really! If you don't have Oregon Chai substitute another brand like TAZO. I haven't tried this yet but wanted to post it so I don't loose it! Cooking time includes crust.

1 1/4 cups nila wafers, pulverized
3 tablespoons melted butter
1 teaspoon ground cardamom
2 tablespoons sugar
1 cup chai latte concentrate
2 teaspoons vanilla
3 (8 ounce) packages cream cheese, room temperature
3 large eggs, loosely beaten
3/4 cup sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
1 teaspoon ground cardamom
1/2 teaspoon ground cloves

Steps:

  • Simmer 1 cup Oregon Chia Original Concentrate until reduced to 1/2 cup.
  • Cool.
  • Preheat oven to 350 degrees.
  • Mix together crust ingredients.
  • Press well into the bottom of a greased 9-inch springform pan.
  • Bake for 12 minutes.
  • When you take pan out of the oven, reduce heat to 290 degrees.
  • Beat cream cheese with mixer until smooth.
  • Add chai reduction and vanilla, blend just until smooth, scraping down sides as you go.
  • Add sugar, cornstarch, and spices. Taste to adjust flavors, but be aware that spices will intensify in the oven.
  • Add eggs, stir by hand until just incorporated.
  • Pour into springform pan, sprinkle a little cardamom on top.
  • Put a baking dish with 1 inch water in the bottom of your oven.
  • Cook cheesecake on middle rack for 55 minutes.
  • Turn off oven, just barely crack oven door until steam stops coming out (30 seconds or so).
  • Close it back up and let it go for another 55 minutes.
  • Take out of oven, slide knife around the edges of the pan to release cake and allow for contraction while cooling.
  • Place on a cooling rack and cover with a large bowl. Let cool until it's room temperature, then move to refrigerator.
  • When cold, you can freeze it for longer storage.

80 g butter, melted
1/2 teaspoon vanilla extract
3/4 cup plain flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/3 cup caster sugar
1/3 cup hazelnuts, roasted, chopped coarsely
1/4 cup apricot jam, warmed
chocolate truffle, to decorate (see my other recipes)
2 teaspoons vanilla extract
250 g cream cheese, softened
500 g ricotta cheese
2/3 cup caster sugar
2 tablespoons lemon juice
2 eggs

Steps:

  • Preheat the oven to 180°C (160°C fan-forced). Lightly grease a 24cm diametre springform cake tin and line its base with baking paper (cut to fit).
  • Combine the top 7 ingredients in a medium bowl. Press mixture over the base of the prepared tin so that it covers the entire base without any gaps.
  • Refrigerate for 20 minutes then bake base in the preheated oven for about 20 minutes or until lightly browned.
  • Remove from oven and spread evenly with jam. Reduce temperature to 150°C (130°C fan-forced).
  • For the cheesecake filling, beat the cream cheese, ricotta, vanilla extract, half the sugar and juice in a large bowl with an electric mixer until just combined; do not over-beat.
  • Combine the remaining sugar and eggs in a separate bowl and beat with an electric mixer for 5 minutes on high speed or until thick and creamy.
  • Gently fold the egg mixture into cheese mixture and carefully pour over prepared base. Bake in preheated oven for about 45 minutes.
  • Cool cheesecake in oven with door ajar for at least 2 hrs then refrigerate overnight.
  • To serve, decorate the centre of the cheesecake with a pyramid of assorted prepared truffles or chocolate curls.

1 egg, beaten

Steps:

  • Preheat oven to 350°F (gas mark 4), warm a baking sheet and grease a loose-bottomed flan tin.
  • Roll out the shortcrust pastry until thin, then line the flan tin with the dough, trimming off any excess.
  • Chill pastry case in the fridge.
  • Cream the butter and sugar together until fluffy, then beat in the egg yolks, flour, lemon rind, lemon juice and sieved cottage cheese.
  • Mix well, then spoon into the pastry case.
  • Mix topping ingredients together and spread on top of the curd filling.
  • Place the flan tin on the warmed baking sheet and bake for approximately 1 hour or until the top is lightly browned and slightly firm.
  • Dust with powdered sugar and serve cool but not chilled.

1 large egg, room temperature
1 vanilla bean, seeds scraped, or 1 teaspoon pure vanilla extract

Steps:

  • Crust: Preheat oven to 350 degrees. In a food processor, pulse crackers with granulated sugar and salt until finely ground. (You should have about 1 1/2 cups.) Add butter; pulse until combined. Transfer to a 9-inch round tart pan with a removable bottom; firmly press into bottom and up sides. Place pan on a baking sheet and bake until crust is dry and set, 10 to 12 minutes. Transfer to a wire rack; let cool completely.
  • Filling: Place cream cheese, sour cream, granulated sugar, egg, vanilla seeds, and salt in cleaned food processor; blend just until smooth. Fill crust with cheesecake mixture. Bake until filling is just set, 30 to 35 minutes. Transfer to a wire rack; let cool 1 hour. Refrigerate until cold, at least 2 hours and up to overnight.
  • To serve, place 2 tablespoons superfine sugar in a sieve and evenly sift over top of cheesecake (avoiding crust). Move a small kitchen blowtorch back and forth across sugar until caramelized (aiming torch toward center to avoid burning crust). Repeat with remaining 2 tablespoons superfine sugar, making a second caramelized layer. Top with spun sugar and serve, slicing through spun sugar and cake with a sharp knife, and wiping blade between slices.

1 pkg 8oz cream cheese
3 eggs
3/4 c sugar, divided
4 tsp canilla extract, divided
1/2 c light corn syrup
3 Tbsp butter, melted
1/4 tsp salt
2 c pecan pieces, toasted

Steps:

  • 1. Preheat oven to 350°F. Prepare crust as directed on package for one-crust pie using 9-inch deep dish pie plate
  • 2. Beat cream cheese, 1 of the eggs, 1/4 cup of the sugar and 2 teaspoons of the vanilla in large bowl with electric mixer on medium speed until well blended and smooth. Spread evenly on bottom of crust. Bake 15 minutes.
  • 3. Beat remaining 2 eggs and 1/2 cup sugar in large bowl with wire whisk until smooth. Add corn syrup, butter, remaining 2 teaspoons vanilla and salt; stir until well blended. Sprinkle pecans evenly over baked cream cheese layer. Slowly pour corn syrup mixture over nuts. Bake 35 to 40 minutes or until just set in center. Cool completely on wire rack.

1 1/2 c chocolate cookie crumbs*
5 Tbsp butter, unsalted, melted
3 Tbsp sugar
1 1/2 tsp instant espresso coffee powder
CAKE
6 oz 70% bittersweet chocolate, chopped
3- (8oz) oz pkgs. cream cheese
2/3 c sugar
1/4 tsp salt
2 eggs, room temperature
1/2 tsp vanilla extract

Steps:

  • 1. 1. Heat oven to 350°F. Combine all crust ingredients in medium bowl. Press into bottom and 1 1/4 inches up sides of 8-inch springform pan. Bake 10 minutes. Cool completely on wire rack.
  • 2. 2. Reduce oven temperature to 325°F. Heat chocolate and 6 tablespoons water in medium heatproof bowl set over saucepan filled with 1 inch almost simmering water (bowl should not touch water). Stir frequently until almost melted. Remove from heat; stir until melted.
  • 3. 3. Beat cream cheese in large bowl at medium speed 30 seconds or just until smooth. Beat in 2/3 cup sugar and salt until smooth and creamy. Beat in eggs one at a time just until blended. Measure 2 cups of the batter; stir into melted chocolate. Stir vanilla into remaining plain batter.
  • 4. 4. Place springform pan on baking sheet. Pour 1 1/4 cups of the chocolate batter into crust. Pour 1 1/4 cups of the vanilla batter over chocolate batter. Reserve 1/4 cup of the chocolate batter; spread remaining batter over vanilla layer. Spoon remaining vanilla batter in small dollops over chocolate batter. Spoon reserved chocolate batter in center of each dollop. Marble batters with small knife (do not overblend).
  • 5. 5. Bake cake on baking sheet at 325°F. for 40 to 50 minutes or until edges are puffed and top is dry to the touch. Center should move slightly when pan is tapped but should not ripple as if liquid. Cool completely on wire rack. Refrigerate overnight. (Cake can be made 2 days ahead.) Store in refrigerator.
  • 6. TIP *Crush chocolate wafer cookies or chocolate sandwich cookies in food processor or in plastic bag with rolling pin.
