1 pkg 14.1oz refrigerated pie crust
1 pkg 8oz cream cheese
3 eggs
3/4 c sugar, divided
4 tsp canilla extract, divided
1/2 c light corn syrup
3 Tbsp butter, melted
1/4 tsp salt
2 c pecan pieces, toasted

Steps:

  • 1. Preheat oven to 350°F. Prepare crust as directed on package for one-crust pie using 9-inch deep dish pie plate
  • 2. Beat cream cheese, 1 of the eggs, 1/4 cup of the sugar and 2 teaspoons of the vanilla in large bowl with electric mixer on medium speed until well blended and smooth. Spread evenly on bottom of crust. Bake 15 minutes.
  • 3. Beat remaining 2 eggs and 1/2 cup sugar in large bowl with wire whisk until smooth. Add corn syrup, butter, remaining 2 teaspoons vanilla and salt; stir until well blended. Sprinkle pecans evenly over baked cream cheese layer. Slowly pour corn syrup mixture over nuts. Bake 35 to 40 minutes or until just set in center. Cool completely on wire rack.

This is not like any other pecan pie I have ever seen before. I haven't tried this one yet, but have it planned for next holiday season.

4 large egg whites
1 1/3 cups graham cracker crumbs
1 cup granulated sugar
1 1/3 teaspoons baking powder
1 1/3 teaspoons vanilla
1 cup pecans, coarsley chopped
whipped cream, as garnish,optional

Steps:

  • Preheat oven to 350 F and butter a 9" pie plate.
  • Beat egg whites using an electric mixer until they hold stiff peaks.
  • Fold in the graham cracker crumbs, the sugar, baking powder, vanilla, and nuts using a rubber spatula.
  • Pour into a buttered pie plate and bake for 25-30 minutes or until pie is puffy and golden.
  • Let cool before serving.
  • If desired, garnish with whipped cream.

Crust:
Apox 3 cups Nilla Wafers
1 cup pecans
3 tbs butter- melted
1 tbs sugar
Custard:
2 cups milk
1/2 vanilla bean, split lengthwise
6 egg yolks
2/3 cup sugar
1/4 cup cornstarch
1 tablespoon cold unsalted butter
For the Whipped Cream
1 1/2 cups heavy cream
2 tsp powdered sugar (or to taste)
Splash of rum
Splash of Vanilla Extract
2 bananas, sliced

Steps:

  • For the crust: Preheat oven to 375. In a food processor, pulse nuts, nilla wafers and sugar until the consistensy of fine breadcrumbs. Pour into a bowl and add melted butter. Stir to combine. Press mixture into a 9" pie plate pressing firmly on the bottom and make sure to come up the sides. Bake for 12-14 minutes. Remove and let cool. For the custard: Combine the milk and vanilla bean in a small saucepan and bring just to a boil over medium heat. Immediately turn off the heat and set aside to infuse for 10 minutes. Whisk the egg yolks and granulated sugar together until light and fluffy. Add the cornstarch and whisk vigorously until no lumps remain. Whisk in 1/4 cup of the hot milk mixture until incorporated. Whisk in the remaining hot milk mixture, reserving the empty saucepan. Pour the mixture through a strainer back into the saucepan. Cook over medium-high heat, whisking constantly, until thickened and slowly boiling. Remove from the heat and stir in the butter. Pour into the cooled crust and chill in the frisge. Cover with plastic wrap so it does not form a skin. When ready to serve, Chill a metal bowl in the freezer and make sure your cream is very cold. Add the sugar (to taste) the rum and the vanilla. Beat to stiff peaks and lather on top of your pie.
