1 cup water, or more as needed
¾ cup shredded vegan cheese
1 clove garlic, minced
½ teaspoon dried basil
¼ teaspoon garlic salt
salt and ground black pepper to taste
1 (14 ounce) can artichoke hearts, drained and chopped
½ cup frozen chopped spinach, thawed and drained

Steps:

  • Soak cashews in water for 1 to 2 hours.

2 (12 ounce) cans artichoke hearts, chopped fine
1 onion, chopped fine
3/4 cup nutritional yeast
6 garlic cloves
1 (12 ounce) can white beans
5 tablespoons apple cider vinegar
3 tablespoons vegan mayonnaise
1 1/2 cups vegetable broth
1 tablespoon salt
1 tablespoon ground pepper
1 teaspoon dried basil
1 dash cayenne

  • 1. Preheat oven to 350.
  • 2. Sautee finely chopped onion and garlic for 3 minutes until starting to brown. Add in spinach, and artichokes and sautee for about 6 minutes or until well combined and tender (You may want to food process this depending on your desired texture).

1 (14 1/2 ounce) can cannellini beans or 1 (14 1/2 ounce) can great northern beans, drained and rinsed
1 tablespoon olive oil
1 small onion, diced
4 garlic cloves, minced
1 (10 ounce) package frozen spinach, thawed and squeezed dry
1 (14 1/2 ounce) can artichoke hearts, roughly chopped
8 ounces vegan cream cheese (I use Tofutti brand)
1/4 cup panko breadcrumbs
2 tablespoons nutritional yeast
1/2 cup vegan mozzarella cheese (I use Daiya brand) (optional) or 1/2 cup vegan mozzarella cheese (I use Daiya brand) (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Add the drained beans into a food processor and blend until smooth, scraping down the sides as you go.
