Number Of Ingredients 11

1 cup raw cashews
1 cup water, or more as needed
12 whole fresh mushrooms
cooking spray
1 tablespoon vegetable oil
1 tablespoon minced garlic
¼ cup nutritional yeast
1 teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon ground cayenne pepper

Steps:

  • Soak cashews in water for 1 to 2 hours. Drain.
  • Blend cashews with 1 cup water until creamy. Add 1 to 2 tablespoons more water if needed to blend well.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Clean mushrooms with a damp paper towel. Carefully break off stems and reserve the caps. Chop stems very finely, discarding tough ends.
  • Heat oil in a large skillet over medium heat. Add chopped mushroom stems and garlic to the skillet. Fry until any moisture has disappeared, taking care not to burn garlic, about 3 minutes. Set aside to cool.
  • Stir cashew cream, nutritional yeast, salt, black pepper, onion powder, and cayenne pepper into the cooled mushroom mixture. Use a little spoon to fill each mushroom cap with a generous amount of stuffing. Arrange the mushroom caps on the prepared baking sheet.
  • Bake in the preheated oven until mushrooms are piping hot and liquid starts to form under the caps, about 20 minutes.

Time 15m

Yield 2 caps, 1 serving(s)

Number Of Ingredients 6

2 portabella mushrooms
1 avocado
1/4 cup onion, diced
1 tomatoes, diced
1/8 teaspoon sea salt
Braggs liquid aminos

Steps:

  • Wash & destem the mushrooms and place them stem side up on a plate.
  • Mash up the avocado and mix in the onions, tomato, and salt. Spoon this into the mushroom caps.
  • Pour Braggs lightly over each mushroom and around the plate so it soaks into the mushroom a bit. You can always add extras such as sprouts, more tomato, or olives. Enjoy!

Tips:

  • Choose the right mushrooms. Large, firm mushrooms with intact stems are best for stuffing. Portobello, cremini, and shiitake mushrooms are all good choices.
  • Clean the mushrooms thoroughly. Use a damp paper towel to wipe away any dirt or debris. Remove the stems and set them aside.
  • Stuff the mushrooms generously. Don't be afraid to pack the stuffing in tightly. The mushrooms will shrink slightly as they cook, so it's important to have a good amount of filling.
  • Use a variety of fillings. There are endless possibilities when it comes to stuffing mushrooms. Try using a combination of vegetables, grains, nuts, and cheese. Some popular fillings include:
    • Spinach and feta
    • Sautéed mushrooms and onions
    • Wild rice and broccoli
    • Quinoa and black beans
    • Tempeh and vegetables
  • Bake the mushrooms until they are tender. The cooking time will vary depending on the size of the mushrooms and the filling. As a general rule, bake the mushrooms for 20-30 minutes, or until they are soft and cooked through.
  • Serve the mushrooms hot or warm. Stuffed mushrooms can be served as an appetizer, main course, or side dish. They are also great for potlucks and parties.
